Egg Recipes
You'll have to forgive me, the post title is blunt: today I'm bringing you a bunch of recipes for your meals and dinners with eggs — lots of eggs!
What am I talking about? It turns out that every second Friday of October (in this case, today, October 11), is International Egg Day, and we have plenty of recipes to celebrate it... and enjoy it at the table!
Onion Soup
Autumn has arrived, or at least that's what the calendar says, so at home dinner brings soups and creams to the forefront. Today's recipe, the traditional onion soup, is one of the standout recipes at home, and best of all it's very easy to make — and it's one hundred percent comforting!
Iberian pork cheeks, recipe video with Claudia and Chef Rafa
You already know how we love to make use of the casserole. From making soups and creams to cooking a rice dish, putting together a good, hearty fabada or stew, preparing braises, cooking countless fish recipes or, of course, cooking meats to the max with very little effort. That’s what we’re doing today!
Rabbit stew with mushrooms and chestnuts in a pressure cooker
Although it takes a while for autumn to arrive on the islands and summer almost merges with "winter" for us, we do like to prepare dishes worthy of the season we're entering.
It's a season when those comforting stews you want to dip bread into are appealing, and you also have the option to add seasonal ingredients like chestnuts or even mushrooms.
Vegetable quiche
You already know how much we love quiches or savory pies at Claudia&Julia. We have them in every color, size, and flavor, but we never get enough. Today's one is a new recipe to add to the list and is perfect to have on hand for when we want to skip meat and fish. Something that, we can assure you, you won't miss once you sink your teeth into this vegetable quiche. It's tasty, juicy, delicious. In one word: amazing.
Steamed salmon with vegetables and Teriyaki sauce
Today's recipe is one of the healthiest we can eat. A steamed salmon with vegetables and teriyaki sauce that tastes heavenly and is ready in no time. All upside for a great dish we love that leaves us more than satisfied every time we prepare it.
Eggplant falafel wrap with yogurt sauce
Wrapping tasty vegetable meatballs together with fresh vegetables and a delicious sauce is something I could never get tired of. Eating a wrap like this with your hands is a celebration of life and the senses. And here I leave you the recipe for a good one. Roasted eggplant and mushrooms give the balls an intense flavor (without being fried; in the Le Creuset nonstick pan they can be made with very little oil, without sticking).
Savory Leek Tart
In summer, savory tarts are a perfect solution for summer dinners, outings, or picnics. They are easy to transport and something everyone likes; moreover, they are just as delicious hot as they are warm, so it’s no problem to take one with you anywhere to share a few hours after making it.
Mini falafel burgers with yogurt and mint sauce
Lebanese cuisine is a true delight; I really enjoy preparing dishes based on this gastronomy and sharing them with friends on summer evenings.
For that reason, and because I know you love surprising your diners, I suggest mini burgers — you know they’re always a draw, and if they’re different from the usual ones we have in mind they’ll always be a hit. So today I bring you mini falafel burgers.
Thai-style stir-fried vegetables
You can make some really impressive recipes using just a frying pan! On this occasion, Julio (WMF chef) brings us an oriental-style vegetable stir-fry that's delicious. It results in very tasty sautéed vegetables, a recipe you can serve either as a first course or as a side with meat or fish.
Steamed mussels with tomato relish
When this time of year comes around I switch into "dinners on the terrace" mode, with friends, in a lively setting and with cool recipes that take very little effort. Without a doubt the one that never fails is steamed mussels, which is one of the easiest dishes you can make. It's an economical dish that everyone usually likes, and paired with a good Ribeiro... What can I tell you that you don't already know!
Homemade Pistachio and Cheese Burgers
At home my mother always made the hamburgers; she preferred to choose the meat and have it ground on the spot and then season it with garlic, parsley, and onion. Those things are not forgotten and I have been unable to buy ready-made hamburgers.
