The recipe I present to you is another easy and quick way to prepare them, like a zucchini cannelloni, filled with a whimsical mix of ricotta and spinach and served with a homemade tomato sauce flavored with basil or lemon thyme.

What am I talking about? It turns out that every second Friday of October (in this case, today, October 11), is International Egg Day, and we have plenty of recipes to celebrate it... and enjoy it at the table!
