Coconut-Crusted Prawns with Grapefruit Salad
What I love most about summer is salads, cold soups, and ice creams. That's why I always try to prepare a wide variety of each so people at home don't "get bored" at mealtime. We can make an incredible assortment beyond the lettuce, tomato, and cucumber salad. One of the latest dishes that has us totally hooked is these coconut-battered prawns with grapefruit salad. It's a true explosion of flavor and textures, very different from the other kinds of salads we usually eat.
