We love fresh salmon at home and our latest discovery is these salmon tacos in oriental sauce. To prepare it we use a wok and in very little time it's on the table.

The truth is we use it a lot because it encourages us to eat more vegetables and healthy ingredients and it's also very easy to handle. It's incredible how fast everything cooks!

For this recipe I recommend you buy good quality salmon, leave it slightly undercooked to appreciate its texture and enjoy it much more. You can also replace the broccoli with asparagus or do half and half.

Nonstick wok with wooden handle Ken Hom and Zester Premium Microplane grater

Ingredients: (For 4 people)

  • 400 g of fresh salmon
  • 1 bunch of broccoli
  • 2 spring onions or 1 large sweet onion
  • Extra virgin olive oil
  • 100 g of Chinese noodles
  • Salt
  • Toasted sesame

For the sauce:

  • 2 tablespoons soy sauce
  • ½ tablespoon rice wine
  • 1 teaspoon honey
  • 1 teaspoon grated ginger
  • 300 ml vegetable stock
  • 1 tablespoon corn flour

Preparation:

  1. In a bowl mix the soy sauce, rice wine, honey, ginger, corn flour and 100 ml of the vegetable stock.
  2. Cut the salmon into cubes, put the wok on the heat, when it smokes add a drizzle of oil and sauté the salmon in two or three batches just to sear it. It will take 5 minutes. Set aside.
  3. Cut the broccoli into small florets, slice the spring onions thinly, lightly salt (the sauce is already a dressing) and add everything to the wok when it's very hot again.
  4. Sauté it for a couple of minutes with wrist movements that toss the vegetables over and over. You can also use a wooden spoon to help.
  5. Add the sauce and stir with the spoon so they take on the flavor.
  6. Add the rest of the stock, 200 ml, and wait for it to heat up before adding the Chinese noodles so they cook at the same time as the vegetables. About 4 minutes or until the stock is absorbed.
  7. Add the salmon and mix gently so it doesn't break up with the other ingredients.
  8. Serve immediately, sprinkling a little toasted sesame if desired.
