More French than Asterix, Le Creuset casseroles and cocottes guarantee you years of enjoyment in the kitchen and at the table.

Cocotte Tradition

Made of cast iron with vitrified enamel, the Tradition casserole is the classic casserole model, preceding the Evolution casserole. It is characterized by:
  • It may come with a steel knob (suitable for maximum temperatures of 250º C), but also with a phenolic knob (black, suitable for maximum temperatures of 200 °C).
  • Its handles are a little smaller compared with the Evolution.
  • The lid design is the traditional one.

You will recognize the Tradition cocottes available in the color variant selector (color ending in "Tradition")

Cocotte Evolution or Cocotte Signature

With the same cast iron and vitrified enamel construction, the Evolution casserole is the latest model from Le Creuset. Also known as the Signature casserole, it includes the following improvements:
  • It comes with a stainless steel knob, suitable for maximum temperatures of 250º C.
  • Larger handles make it easier and safer to lift and carry the cast iron pot from the oven to the table, even with oven gloves.
  • Updated lid design, with a better fit to retain all the moisture and flavor inside the casserole.

What sets Le Creuset cocottes apart

  • Made in cast iron with vitrified coating, cocottes can be used on all types of heat sources (including induction), in the oven, and can even be frozen and washed in the dishwasher.
  • Their smooth satin finish makes them shine both in the kitchen and at the table.
  • Le Creuset casseroles and cocottes are especially suited to slow cooking over low heat to achieve the most tender and flavorful meats.
  • Free from non-stick coatings, they are pieces that offer 100% natural cooking of food.
  • There is no material like cast iron for transferring heat. So they heat up from the base and the heat rises up the sides (and the lid!), heating the whole dish and ingredients all around, providing faster, more even cooking and greater efficiency.
  • With lifetime warranty.

NOTE: The casserole with a black exterior features a black enameled interior, made of exactly the same vitrified cast iron material as the rest of the casseroles, but without the cream-colored enamel.

What can you do in a Le Creuset casserole?

Everything! Round cast iron cocottes are versatile! Le Creuset cocottes are suitable for both the stovetop (including induction) and the oven (or the barbecue or fireplace if you wish). And in them you can make:

  1. Stews and braises: They are ideal for slow-cooked dishes such as casseroles, stews, and soups. cast iron distributes heat evenly, slowly cooking the ingredients and bringing out their flavors.
  2. Roasts: From roast chicken to larger cuts like lamb or pork, cocottes are perfect for roasting. They retain moisture and caramelize ingredients for juicy, flavorful results.
  3. Slow-cooked meats: Prepare slow-cooked meat dishes such as ragout, pulled meat, or even ribs. The steady, gentle heat ensures tender, flavorful meat.
  4. Creams and soups: place them over the heat and let them simmer for hours.
  5. Legumes and vegetables: All kinds of legumes and vegetables. From boiling them to making your stews, you can cook spoon dishes and dishes full of vitamins, iron, and health.
  6. Rice: from simply boiling it to making risottos or rice dishes your way.
  7. Fish: stewed or roasted, they turn out fabulous.
  8. Pasta dishes: From lasagna to mac and cheese, casseroles are perfect for baked pasta dishes. They allow for even cooking and retain heat to keep dishes warm. They are tall casseroles with plenty of capacity, so you can boil all kinds of pasta in them. And if you want to brown it in the oven at the end, you can do it in the same casserole.
  9. Vegetarian dishes: Cook vegetables steamed (by placing a steamer basket inside), gratinated, or sautéed. Cocottes keep nutrients intact and enhance the natural flavors of vegetables.
  10. Breads and cakes: Heat retention makes casseroles ideal for baking bread, buns, and cakes. The lid creates a humid environment that helps form a crisp crust and a soft crumb (in fact, because it retains the moisture from the dough inside the casserole, you do not need to add moisture to the oven as with other bread-making methods).
  11. Sauces and reductions: Even heat distribution helps create perfect sauces and reductions. From pasta sauces to meat glazes, cocottes are excellent for slow cooking.
  12. Hot drinks, jams, and so many other desserts: with a casserole, you have a surface that distributes heat from the base to the sides very efficiently, while offering great capacity in both width and height. So they are ideal for making everything from hot drinks and punches to jams, rice pudding, custards, and other desserts and preparations you can imagine.

Why we like the Le Creuset Evolution Round Cocotte

  1. Like all cocottes, the heat transfer and distribution is perfect thanks to the wonderful cast iron structure of these casseroles.
  2. Like all Le Creuset products, it is not only practical and very durable, but so beautiful it can be used to serve food at the table.
  3. It is incredibly versatile! Both because it can be used on the hob and in the oven, and because you can make all kinds of dishes in it (starters, mains, desserts, ...)
