I’m aware that if you’re facing the experience for the first time, making and kneading your own dough at home may seem a bit intimidating, but believe me when I tell you it’s nothing beyond anyone’s reach.

In this case, I wanted to follow the recipe from the Simili sisters’ book, Bread and Italian Pastries, for the preparation of a thin dough base, perfectly explained with all the details we need to enjoy a homemade pizza like few others.

As you become familiar with the task (and I warn you it can be highly addictive), the results will only improve. I’m convinced that after the first one there will be a second and many more, because once you see how simple and comforting it is to make your own pizza, it will be hard to keep your hands off the dough.

Ah! Are you the lucky owner of a KitchenAid? Even better for me! Because then all you have to do is put the ingredients in the bowl and let it knead for you. Friend, your excuses are running out! We’ll make this recipe with three kinds of cheese, with bacon or pancetta and arugula. I also used a fantastic Emile Henry ceramic tray that lets you cook pizzas to just the right crispness. You can even bring it to the table on the tray for serving. It will retain heat and distribute it evenly.
