If there's an easy dessert, refreshing and full of flavor, it's this vegan yogurt, blueberry and lemon ice cream that I bring today. Its combination of fresh fruit with the creamy touch of yogurt makes it irresistible, and you don't need dairy to enjoy a smooth, delicious texture!

This ice cream recipe vegan is made with a few ingredients and with hardly any effort, you'll have perfect homemade ice cream for any time of day. That's the great thing about the Creami Ninja ice cream maker, it makes making ice cream child's play (in fact, at home the kids are already the ones making the ice cream).

Ideal for an indulgent dessert or those hot days when you want something sweet but light. You just need to prepare it in advance and let the freezer do the rest!

Ingredients

  • 125g fresh blueberries
  • 60g powdered sugar
  • 180g plant-based natural Greek-style yogurt, unsweetened
  • 125ml whipped oat cream
  • 1 tablespoon light agave syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • a pinch of salt

Preparation

  1. Place the blueberries and powdered sugar in a medium bowl and mash them with a fork.
  2. Add the rest of the ingredients and stir well until the mixture is homogeneous and the sugar has completely dissolved.
  3. Pour the mixture into the empty container of the ice cream maker, cover the tub and freeze it for at least 24 hours.
  4. When the ice cream is ready to process, take the tub out of the freezer, remove the lid and place it in the outer pitcher-shaped container of the Ninja Creami. Install the whisk accessory on the container lid, lock the Set, and place it on the ice cream maker base. Turn the handle to the right until you hear a click to secure it in place.
  5. Select the ICE CREAM program and let the machine do its work.
  6. When the process is finished, remove the ice cream from the tub and enjoy immediately.

Tips:

If your freezer is too cold, the ice cream may turn out a bit brittle or icy. Don't worry, if this happens, just reprocess it using the RE-SPIN function to achieve a smoother, creamier texture.

Hola Rebeca,
