This steamed chocolate pudding recipe is sure to be a big hit at home. It's a recipe by Virginia, author of Sweet&Sour, prepared in the WMF Vitalis, so we can get the most out of this pot designed for steaming all kinds of recipes.
Isn't it hard to turn on the oven in summer? But we don't like to give up sweet treats, especially chocolate.
Today I'm bringing you a delicious, simple, and super quick recipe, presented in an individual version in the beautiful mini cocottes by “Le creuset”, with which you won't need to turn on the oven, because We're going to steam them thanks to the WMF Vitalis pot, which, besides being great for light meals, is also perfect for making desserts as quick and delicious as these mini puddings.

This steamer pot has the advantage that, thanks to its glass lid, you don’t need to open it to check on your puddings. It also features a thermometer that continuously shows the temperature they’re cooking at.
This chocolate pudding recipe is simple; it contains no flour and is therefore quite creamy. Also, since it doesn't include flour suitable for celiacs, and also for those who are lactose intolerant, since you can replace traditional cow's milk with hazelnut or almond milk, which will give it a very special touch.
Let's get to the recipe!
Ingredients (for 3 puddings)
- 3 large eggs
- 120 ml milk (you can substitute with almond or hazelnut milk or lactose-free milk)
- 60gr of brown sugar
- 120gr of chocolate for melting
- 1 teaspoon of Madagascar vanilla extract
- ¼ teaspoon of salt

Preparation
- We varnish the interior of the Le Creuset mini cocottes with a pinch of melted butter with the help of a Basting brush (or we spray with mold release spray if we prefer). We set aside.
- We prepare the WMF Vitalis pot With 1 liter of water, insert the steaming attachment and cover with the lid with the thermometer. Heat until it reaches 90-100ºC.
- While it heats up, we prepare the pudding batter, which won’t take us more than 5 minutes (the time it takes for the water in our WMF Vitalis to heat up). To do this:
- We melt the chocolate in a bain-marie in the microwave in short intervals so it doesn't burn. Set aside
- We beat the eggs together with the sugar until they foam with the balloon whisk attachment of the KitchenAid or with the hand mixer.
- We add the milk, the vanilla extract and the salt and mix well.
- Finally, we add the melted chocolate and mix with a rubber spatula, until we have a completely homogenized mixture.
- Divide the batter among the 3 mini cocottes. Place the mini cocottes without their lids on the steam tray of the Vitalis. Cover the Vitalis with the glass lid and steam the puddings for 20 minutes at 90-100ºC. The puddings will puff up slightly during cooking but will sink as they cool—this is normal.
- After this time, lift the lid, insert a skewer into the center of one of the puddings, and if it comes out clean, it's done.
- Remove from the Vitalis and let cool to room temperature. Once cool, cover with the lids of the Le Creuset mini cocottes.
- When serving, sprinkle a little powdered sugar and garnish with some red berries and a few fresh mint leaves, or simply with a scoop of ice cream.

A quick, simple dessert for summer so you don’t have to give up chocolate just because you’d have to turn on the oven.
These puddings keep well for 2-3 days in the fridge. When serving, you can give them a few seconds in the microwave to warm them slightly, and that's it.

Estoy deseando que me llegue la Vitalis para poder probar ésta receta entre otras y poder cocinar al vapor para una dieta más saludable.
Lo que me preguntaba es si despues de unos cuantos minutos la vitalia no se queda sin agua y se quema el fondo???. Es lo que me da un poco de miedo, que se evapore rápido. Gracias.
