Apple pies are to autumn what orange trees and falling leaves are. Although it is a dessert we make and eat throughout the year, this is the season when we crave it most. This apple pie with cinnamon spirals is a version of the classic American “apple pie” made by Martha Stewart that stole our hearts from the moment we discovered it.

This panellets recipe is one of the most traditional at this time of year. It is a confection from Catalan, Balearic and Valencian pastry traditions and they were made to celebrate All Saints' Day on November 1st. The recipe for these braided cinnamon buns originated in the 1920s, and were initially considered a luxury, since exotic spices like cardamom and cinnamon were scarce. With the economic boom of the 1950s, cinnamon and cardamom buns became highly prized delicacies in the hearts and homes of Swedes.
TheSwedish buns, known as 'Kanelbullar' (kanelbulle, singular), have become a culinary treasure of Swedish tradition. These buns, intricately braided, imperfect and individual, capture the warm essence of cardamom from southern India. Cinnamon and cardamom are the most popular fillings, adorned with Swedish pearl sugar on the cinnamon ones and a touch of sugar with cardamom on the cardamom ones.
