You’ll have to forgive me, the post title is exactly what it says on the tin: today I’m bringing you a whole bunch of recipes for your lunches and dinners with eggs, lots of eggs!

What am I talking about? It turns out that every second Friday in October (in this case, today, October 11), is World Egg Day, and we have plenty of recipes to celebrate it... and enjoy it at the table!

For that reason, we’ve put together in a roundup of 16 egg recipes made in the oven, frittatas, quiches... A whole bunch of recipes that will help you fill a table with appetizers, serve a first course, or sort out dinner.

1. Eggs in dishes... or made my way (in a skillet or oven)

Here are some of my favorite recipes for sorting out dinner or preparing individual servings to wow guests as a first course at lunch. These are very easy recipes to make but truly delicious. I hope you enjoy them!

Nothing is more practical and better presented than bringing your individual portion of recipes to the table. For that, the Revol dishes oven-safe, or the mini cocottes are perfect tools.

 

1. Broken eggs with thyme potatoes and artichoke chips

A divine recipe for any occasion! On the plate, a base of boiled potato, topped with egg that we bake in just a few minutes, and crowned with artichoke chips.

2. Truffled eggs with mushrooms

The classics never die! Here you’ll find a very elegant recipe with mountain flavors: if you like the taste of truffle, combining it with egg is always a win, and pairing it with mushrooms makes for a fantastic dish to enjoy.

3. Eggs in a mini casserole

We invite you to combine eggs with vegetables and cheese, an essential classic that you can quickly prepare in the oven in a mini casserole, so each diner can be served their own portion. In the recipe we suggest making it with beans, but you can use asparagus, carrot, zucchini... choose your favorite vegetables and you will get it right.

Prepare your recipes in a cast iron skillet if you want to finish cooking the egg without oil and in the oven. For that, the Le Creuset skillet pan is ideal.

 

4. Huevos rancheros my way

If you like fried eggs, huevos rancheros are their Mexican version: fried eggs served on a base of corn tortillas with a spicy sauce. A recipe for the brave, definitely worth trying.

5. Eggs with pisto

I love the combination of a good base of vegetables and tomato with egg. I think it’s a winning combo; eggs with pisto are my perfect dinner.

6. Potato and kale omelette

A refreshed classic: the classic potato omelette can be paired with so many ingredients, but making it with kale is truly nutritious... and tasty!

 

2. Quiches and frittatas

I think making quiches and frittatas is the perfect solution for an appetizer (guests always feel like grabbing a piece to start filling up!), and they’re definitely perfect recipes for having dinner ready without complications, since you can prepare them in advance and serve them cold or hot, depending on preference. They’re colorful dishes that look great on the table and, most importantly, taste divine and no one can stop going back for more!

 

You can make your quiches in a ceramic mold or a perforated one; the results for baking the crust and filling are excellent. You can see the quiche pans here.

 

11. Endive and leek quiche, inspired by Julia Child’s book

Following Julia Child’s advice is always a win, and that’s reflected in this healthy recipe that’s perfect for everyday cooking.

12. Salmon and goat cheese quiche

One of my favorites! The smoothness of fresh goat cheese pairs with the flavor of salmon in a perfect combination. You can also make it with smoked salmon, without even using a skillet, for an equally delicious recipe with contrast that you’ll have ready in no time.

13. Cod, leek, and onion quiche

With a shortcrust pastry base, we’re bringing you a quiche that combines the flavor and texture of cod with egg and onion in a quiche that will become one of your favorites.

14. Tomato frittata

If you like tomato, you’ll love this frittata. It’s perfect for its simplicity and for the standout flavor of oven-roasted tomato during cooking.

15. Artichoke and cured ham frittata

I love the contrast of artichokes with cured ham, and bringing both together in a frittata is like saying "Yes, I do, forever."

16. Blood sausage and caramelized apple frittata

In this frittata you’ll find a most elegant and surprising combination; the caramelized apple melts and blends with the bold flavor of the blood sausage, resulting in a very delicious frittata.

¡Hola! Muchas gracias, pero aquí sólo aparecen las recetas de 1 a 6 y de 11 a 16… ¿Dónde están las recetas 7 a 10? Porque sólo son 12 en total, no 16… ¡Saludos!
