You’ll have to forgive me, the post title is exactly what it says on the tin: today I’m bringing you a whole bunch of recipes for your lunches and dinners with eggs, lots of eggs!
What am I talking about? It turns out that every second Friday in October (in this case, today, October 11), is World Egg Day, and we have plenty of recipes to celebrate it... and enjoy it at the table!
So, we’ve put together a roundup of 16 egg recipes made in the oven, frittatas, quiches... A whole bunch of recipes that will help you fill a table with appetizers, serve as a starter, or sort out dinner.

1. Eggs in a dish... or made my way (in a pan or in the oven)
Here are some of my favorite recipes when it comes to sorting out dinner or preparing individual portions to wow guests as a first course. They’re very easy recipes to make, but truly delicious. I hope you enjoy them!
Nothing is more practical, or better presented, than bringing your recipes to the table in individual portions. For that, Revol dishes that are oven-safe or mini cocottes are perfect tools.
1. Eggs with broken potatoes, thyme and artichoke chips
A divine recipe for any occasion! On the plate, a base of boiled potato, which we’ll cover with egg cooked in the oven in just a few minutes, and top with artichoke chips.
2. Truffled eggs with mushrooms
The classics never die! Here you’ll find a very elegant recipe with mountain flavors: if you like the taste of truffle, pairing it with egg is always a win, and combining it with mushrooms becomes a fantastic dish to enjoy.
We invite you to pair eggs with vegetables and cheese, an essential classic that you can quickly prepare in the oven in a mini-casserole, so each guest can be served their own portion. In the recipe, we suggest making it with beans, but you can use asparagus, carrot, zucchini... choose your favorite vegetables and you will get it right.
If you want to finish cooking the egg in the oven without oil, prepare your recipes in a cast-iron skillet. For that, Le Creuset skillet is ideal.
If you like fried eggs, huevos rancheros are the Mexican version: fried eggs served on a base of corn tortillas with a spicy sauce. A recipe for the brave, definitely worth trying.
I love the combination of a good base of vegetables and tomato with egg. I think it’s a perfect match; eggs with ratatouille are, for me, the perfect dinner.
An updated classic: the classic potato omelet can be paired with so many ingredients, but making it with kale is truly nutritious... and tasty!
2. Quiches and frittatas
I find making quiches and frittatas to be a perfect solution for an appetizer (guests always go for a little slice to start filling up!), and they’re definitely perfect recipes for having dinner ready with no fuss, since you can make them ahead and serve them hot or cold, whichever you prefer. They’re colorful dishes that look great on the table and, most importantly, taste divine and always leave people wanting more!
You can make your quiches in a ceramic mold or a perforated one; the results for the crust and filling are fantastic. You can see the quiche pans here.
11. Endive and leek quiche, inspired by Julia Child’s book
Following Julia Child’s advice is always a good idea, and it shines through in this healthy recipe, perfect for everyday cooking.
12. Salmon and goat cheese quiche
One of my favorites! The creaminess of fresh goat cheese complements the flavor of the salmon in a perfect combination. You can also make it with smoked salmon, without even going through the pan, resulting in an equally delicious recipe with great contrast that you’ll have ready in no time.
13. Cod, leek and onion quiche
With a shortcrust pastry base, we’re suggesting a quiche that combines the flavor and texture of cod with egg and onion in a quiche that’s sure to become one of your favorites.

14. Tomato frittata

I love the contrast of artichokes with cured ham, and bringing them together in a frittata is like saying "Yes, I do, forever."
16. Blood sausage and caramelized apple frittata
In this frittata you’ll find a very elegant and surprising combination; the caramelized apple melts and blends with the bold flavor of the blood sausage, resulting in a wonderfully delicious frittata.
