To prepare them, we bake in a 23 cm Naturals Nordic Ware pan, perfect for this type of baking: it heats up super quickly, so in just a few minutes you'll have your brookies ready.

How to make brookies: the recipe

Ingredients

For the cookie dough:

  • 120 g all-purpose flour
  • 110 g brown sugar
  • 50 g white sugar
  • 80 g unsalted butter, melted and slightly cooled
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup chocolate chunks
  • 1/2 cup mini chocolate chips

For the brownie batter:

  • 3 large eggs
  • 1 cup dark cocoa (about 100 g)
  • 1 tsp salt (5 g)
  • 2 tsps vanilla extract
  • 180 g unsalted butter
  • 250 g white sugar
  • 3/4 tsp baking powder (chemical leavening, approx 3 g)
  • 125 g all-purpose flour
  • 1 1/2 cups chocolate chunks (approx 250 g)

Preparation

Make the cookie dough:

  1. Sift the flour, baking soda and salt into a bowl. Set aside.
  2. Use the KitchenAid mixer with the whisk attachment to beat the brown sugar, white sugar and the melted butter for 1-2 minutes.
  3. Add the vanilla and the egg, making sure they are well incorporated.
  4. Gradually add the reserved dry ingredients mixture until you obtain a homogeneous dough.
  5. Finish by adding the chocolate chips and chocolate chunks, folding gently.

    Make the brownie batter:

    1. In another bowl, sift the flour, baking powder and salt.
    2. Beat the eggs, vanilla and cocoa powder with the mixer and the paddle attachment.
    3. Melt the butter in a microwave-safe container, mix in the sugar and heat 30 seconds more to dissolve the sugar well.
    4. Combine the butter and sugar mixture with the previously beaten ingredients, mixing on low speed until smooth.
    5. Incorporate the dry ingredients and the chocolate chunks, mixing until everything is well combined.

      Assembly and baking:

      1. Preheat the oven to 180°C and line a 23x23 cm square pan with parchment paper.
      2. Spread ¾ of the brownie batter on the bottom of the pan, using a spatula to distribute it evenly.
      3. With an ice cream scoop, distribute portions of the cookie dough over the brownie, leaving uncovered spaces.
      4. Add the remaining brownie batter to fill the empty spaces and smooth the surface.
      5. Bake for 30 to 35 minutes or until you see the edges and almost all of the center are firm to the touch.
      6. Let cool in the pan on a rack before cutting into portions to serve. Remember that leftover cookie dough can be baked separately or frozen for another time.

        Notes

        • Choice of Cocoa: Using dark cocoa in the brownie batter brings a deep flavor and an impressive appearance, but make sure your guests appreciate the intensity this ingredient provides. If you prefer something milder, consider adjusting the amount or using a blend of cocoas.
        • Oven Monitoring: Since we are combining two types of dough with potentially different baking times, it is crucial to keep an eye on the oven toward the end of the baking time. Look for that sweet spot where the brownies are done but the cookies still retain a touch of softness.

        ¿Qué son los brookies?

        Un brookie es un delicioso híbrido entre un brownie y una galleta (cookie), combinando lo mejor de ambos mundos en un solo postre. La base de un brookie típicamente consiste en una capa de masa de brownie, rica y chocolatosa, coronada con una capa de masa de galleta, que al hornearse juntas crean una textura única: húmeda y densa por el brownie, con los bordes y la parte superior crujientes como una galleta.

        La preparación de un brookie puede variar: algunas recetas sugieren mezclar trozos de masa de galleta dentro de la masa de brownie, mientras que otras colocan una capa distinta de cada una, una sobre la otra. También hay versiones en las que los ingredientes de ambas masas se combinan en una sola, buscando equilibrar los sabores y texturas de ambos dulces clásicos.

        Brookie, la mezcla de brownie y galleta perfecta

        Ingredientes

          • 120 g harina de trigo
          • 110 g azúcar moreno
          • 50 g azúcar blanco
          • 80 g mantequilla sin sal, derretida y enfriada ligeramente
          • 1/4 cdta de bicarbonato de sodio
          • 1/2 cdta de sal
          • 1 cdta de extracto de vainilla
          • 1 huevo grande
          • 1/2 taza de trozos de chocolate
          • 1/2 taza de mini chispas de chocolate

          • 3 huevos grandes
          • 1 taza de cacao negro (unos 100 g)
          • 1 cdta de sal (5 g)
          • 2 cdtas de extracto de vainilla
          • 180 g de mantequilla sin sal
          • 250 g de azúcar blanco
          • 3/4 cdta de polvo de hornear(levadura química, aprox 3 g)
          • 125 g de harina de trigo común
          • 1 1/2 tazas de trozos de chocolate (aprox 250 g)

          Preparación

            1. Tamiza en un recipiente la harina, el bicarbonato y la sal. Reserva.
            2. Utiliza la amasadora KitchenAid con el accesorio globo para batir durante 1-2 minutos el azúcar moreno, el azúcar blanca y la mantequilla ya derretida.
            3. Incorpora la vainilla y el huevo, asegurándote de que se integren bien.
            4. Añade gradualmente la mezcla de ingredientes secos que reservaste, hasta obtener una masa homogénea.
            5. Finaliza agregando las chispas de chocolate y los trozos de chocolate, mezclando suavemente.
            6. Hacemos la masa del brownie:

            7. En otro bol, tamiza la harina, el polvo de hornear y la sal.
            8. Bate los huevos, la vainilla y el cacao en polvo con la batidora y el accesorio de pala.
            9. Derrite la mantequilla en un recipiente que puedas usar en el microondas, mezcla el azúcar y calienta 30 segundos más para disolver bien el azúcar.
            10. Une la mezcla de mantequilla y azúcar con los ingredientes batidos anteriormente, mezcla a velocidad baja hasta que esté suave.
            11. Incorpora los ingredientes secos y los trozos de chocolate, mezclando hasta que todo esté bien combinado.

            1. Prepara el horno precalentándolo a 180°C y forra un molde cuadrado de 23x23 cm con papel de hornear.
            2. Extiende ¾ de la masa de brownie en el fondo del molde, usando una espátula para distribuirla de manera uniforme.
            3. Con una cuchara para helado, distribuye porciones de la masa de galleta sobre la de brownie, dejando espacios sin cubrir.
            4. Añade el resto de la masa de brownie para cubrir los espacios vacíos y alisa la superficie.
            5. Hornea durante 30 a 35 minutos o hasta que veas que los bordes y casi todo el centro están firmes al tacto.
            6. Deja enfriar en el molde sobre una rejilla antes de cortar en porciones para servir. Recuerda que las sobras de la masa de galleta puedes hornearlas aparte o congelarlas para otro momento.
