Today I wear my apron with a very French air, and I do it for a double reason: this recipe for tartiflette is a typical French recipe , and it also includes plenty of cheese. Cheese and potato, oh, la la!

In this version that we detail step by step below, we make the tartiflette with raclette cheese , to round off the French air of the recipe. It is a very easy recipe to prepare and ideal for sharing -I assure you that success among guests is guaranteed.

What is a tartiflette?

The tariflette is a typical recipe from the Savoie (Savoie) , the Western Alps, whose main ingredients are potatoes and cheese . So much so, in fact, that the name Tartiflette comes from tartifla ( " potato" in Savoy Arpitano), and the recipe was created in the 1980s by the Reblochon Interprofessional Union, the cheese with which it is typical to make the recipe (reblochon is a typical Haute-Savoie cheese).

Although the main ingredients of the tartiflette are reblochon cheese and boiled potatoes , today there are countless versions of the recipe, which range from using different cheeses to using onion, cooking cream, spices, ham or bacon ... In all cases, the recipe is a dish full of energy and that is presented in a gratin .

In our version today, instead of reblochón cheese we will use another typical French cheese, raclette cheese, which melted and gratin is delicious with the potato and the touch of wine that is also customary to add to the dish. For all these reasons, we have nicknamed this recipe Tartiflette raclette, I hope you enjoy it -I recommend it as a first course at lunch (if you do, serve a light second course!), or as a main course at dinner . Tartiflette (French fries) recipe

Ingredients

  • 600g raclette cheese
  • 1.2kg potatoes
  • 2 large onions
  • 1 tbsp sunflower oil
  • 250 g smoked pork belly (or bacon)
  • 1/2 glass of white wine
  • Salt
  • Pepper
  • Nutmeg

Preparation

  1. Clean the potatoes and peel them.
  2. With the help of the Gefu potato cutter , or with a knife, cut them into cubes.
  3. Peel the onions, and cut or chop them into large pieces.
  4. Put the De Buyer Mineral B paella pan on the heat, add a few tablespoons of oil and fry the onion over low heat.
  5. Chop and add the smoked bacon, and cook it for a few minutes, until the bacon is golden.
  6. Add the potatoes cut into cubes and apply salt (half a tablespoon). Let it cook covered over medium heat for about 20 minutes, stirring occasionally with a spatula. We want the potatoes to be tender, but not crumbly.
  7. Preheat the oven to 200ºC.
  8. Apply the white wine to dissolve the bottom formed in the paella pan, and let it cook for about 3 or 4 minutes.
  9. Apply pepper to taste and add half a teaspoon of nutmeg. Mix to distribute and reserve from the fire.
  10. Apply the raclette cheese on top of the potatoes, covering the entire paella pan. Try to place the slices of cheese in circles, to create a nice effect, and put the paella pan in the oven.
  11. Bake for about 5 minutes to help the cheese melt, and then go to "grill" mode, to gratin.
  12. Serve hot, and accompany the evening with bread.

  • We prepare the recipe in the Mineral paella pan, suitable for the oven, although the tradition of this recipe is to do it in a long-handled pan. That being the case, you can make the recipe in the stainless steel Mango Mineral pan , suitable for the oven and as French as this tartiflette. Ideal!
  • Instead of bacon, you can apply small pieces of ham or bacon. They also provide flavor and seasoning.
