I bring you a delicious breakfast: roasted banana with honey . Served in a bowl and accompanied with Greek yogurt and granola, and a good touch of coconut and cinnamon, they are delicious.

The only thing you will have to consider is what quantities you want of each topping (in the list of ingredients I leave you several ideas, but think about what other ingredients you would like to combine with the roasted plantain), but these roasted plantains become a vice and a sweet but energetic breakfast free of added sugars (or, at least, free to the point where you decide not to add more than the sweetness of the banana).

Ingredients

  • 2-3 medium bananas
  • 1-2 tablespoons of honey (to taste)
  • 1-2 tsp cinnamon (to taste)
  • 1-2 tablespoons of brown sugar or brown sugar (optional, but if you want them more caramelized and with that aroma of sugar cane, apply it)
  • Big wave
  • Vanilla Greek Yogurt*

Others: you can accompany the bowl with other ingredients of your choice, such as coconut shavings, chocolate chips, panela, found chocolate, nut cream, roasted (or fresh) strawberries, raspberries or blueberries...

You can also substitute Greek yogurt for ice cream (vanilla, coconut or yogurt ice cream, with the roasted banana, it's delicious).

How to make roasted plantains

  1. Preheat the oven to 180 degrees.
  2. Peel the plantains and cut them crosswise in half. Arrange them on a baking sheet (I used the Nordic Ware Naturals Collection Sheet Pan ).
  3. Pour the honey on top of the bananas and sprinkle with cinnamon to taste, and brown sugar or cinnamon if you like.
  4. Bake for 8-10 minutes or until they are roasted (in the last 2 minutes, put the grill function so that they take on a more golden color).

*It is up to you to roast them with more or less sugar, and the oven will help them roast. The banana is already sweet by itself, but brown sugar will help you achieve a greater degree of caramelization, apart from providing that more rustic touch of brown cane sugar to the roasted banana.

  1. In a bowl, arrange the Greek yogurt base and add the roasted bananas. Add the granola, and the other toppings to your liking, such as chocolate chips, flaked or powdered coconut shavings and cinnamon, other fruit, cereals, some brown sugar...
  2. Serve immediately, you'll see what a great way to start the day!
