Monkfish stew with shrimp, mussels and hazelnut allioli bread

Fish stew is a traditional dish, typical of fishing areas, as fishermen made it with fish they had not been able to sell. Like almost all popular recipes, it is a simple dish to prepare, rich and very nutritious, and a real delight when made with good fresh fish.

On this occasion, Chef Stephane Poussardin offers us a suquet of monkfish with prawns, a recipe as delicate as it is delicious, ideal for Sundays and holidays with the family.

This is a dish that you can prepare without any major complications , but that will leave you feeling great, and you can prepare it the day before or in the morning so that the meal is one hundred percent enjoyable.

Ingredients

4 Medallions of monkfish, 160 gr. each, skinless and boneless
4 pieces of fresh prawns
200 gr. of rock mussels
1 loaf of pre-baked bread, cut lengthwise into long strips
1kg. “Monalissa” potatoes
1 Piece of fresh Fennel
80 gr. of flour

For the aioli:

1 Egg yolk
2 cloves of garlic, peeled
Sunflower oil
Salt
50 gr. hazelnuts

For the fish stock:

1 small monkfish head, cut off
500 gr. of rock fish
100 gr. of sea crab (optional)
1 Onion
1 Leek
1 celery branch
2 carrots
4 pieces of tomato
2 pieces of dried ñoras
3 cloves of garlic with skin
1 bay leaf
1 tsp sweet paprika
Brandy
Water
Salt

For the minced meat:

2 cloves of garlic
Parsley
3 slices of dry bread
80 gr. of raw almonds
A few strands of saffron
Sunflower oil for frying

Preparation

We prepare the picada:

Fry all the ingredients separately, except the saffron, drain and blend everything together with the saffron.

To make the fish stock:

Use the leftover oil from the mince to fry the aromatic vegetables.
Add the fish cleaned of blood and crabs.
Sauté for a few minutes until the fish falls apart.
Add the spoonful of paprika, stir and flambé with the brandy.
Add water and let it boil for about 25 minutes. After this time, mash the fish and strain.

For the aioli:

Mix the peeled garlic with the salt in a bowl.
Crush with a mortar to obtain a paste.
Add the yolk and, while stirring, gradually add the oil until you obtain a creamy texture.

For the potatoes and fennel:

Make balls with the potatoes and cook them in the fish stock until soft.
Confit the julienned fennel over low heat with a little salt and oil, covering the pot with cling film.

Mounting the dish:

Toast the bread strips in the oven and place the aioli with the chopped hazelnuts on top lengthwise.
Heat the stock with the minced meat and let it reduce.
Flour and salt the monkfish medallions and cook them in the broth with the mussels and prawns.
Add the potato balls and fennel at the end of cooking.
Serve the medallions on a deep plate with a prawn, mussels, potatoes, fennel and strips of hazelnut aioli bread.
