Ingredients
- 8 potatoes (the varieties with a firm texture, and of similar size for homogeneous cooking of all)
- 5 or 6 tbsp melted butter or olive oil
- 4 tsp smoked paprika
- 2 tbsp thyme
- 2 tbsp rosemary
- 2 tbsp parsley
- 2 tsp smoked sea salt
- 200 g of pancetta or bacon, cut into cubes
Preparation
- Preheat the oven to 200°C.
- Cut a thin layer down the length of each potato, which will give them a base for making hasselback cuts. After placing the potato on its cut side (you will see that it is now easily stable) you will have to make many cuts, with a sharp knife: make deep cuts that reach three quarters of the way down, and approximately every ½ cm between each other*. Repeat this process with all the potatoes.
- Pour a splash of oil or butter into the skillet frying pan , which is suitable for the oven, and place the cut potatoes in it, distributing them throughout the pan.
- Finely chop all the herbs and place them in a bowl along with the oil and spices. Mix and use that marinade to paint the potatoes with that herb mixture.
- Sprinkle with smoked sea salt.
- Bake the potatoes in the oven for 50 minutes at 190º - 200ºC (place the pan in the oven at a medium/low oven height) and then add the bacon on top. Bake again for an additional 10 minutes.
Grades
- If you want to serve them as a first course, you can do it as is or accompany them with some steamed broccoli or a fresh green salad drizzled with lemon juice.
- If you want, you can use this recipe to make it the perfect accompaniment to many main courses: arrange one or two potatoes with bacon next to baked or grilled fish, or next to a steak or hamburger. It will level up the presentation and be delicious!
- There is a trick to ensure that you do not cut the potato all the way, and that is to put a wooden spoon (it can be another utensil) on either side of the potato, so that when you cut you always stay at the same height because you cannot go down. more than the height of the stop that you have placed on either side.
- If you like the flavor of garlic , before placing the potatoes to bake you can heat the pan over low heat with a little oil, and place some peeled garlic in it. Let the oil become flavored and sauté the bacon for a few seconds in that oil so that it also gains flavor (and begins to cook). Remove from the pan and set aside, and follow the recipe as indicated (at the end of baking the potatoes, return the bacon to the pan).
- The potatoes are delicious like this, but if you are a cheese lover you can add grated or gratin cheese on top , or even add a few pieces of slice between cuts of each potato. A delight!
