Raquel, author of Los Tragaldabas , brings us today a very special recipe: a cake in the format that we like so much, the great and delicious shape of a bundt, to which is added the flavor of an aroma that many of you enjoy every day, the coffee. A fabulous proposal to start the day!

I am a coffee enthusiast, I love it!!! I can almost tell you that I am addicted to it. It would be impossible to start the day without a warm coffee to activate my whole body. That is why in this bundt cake recipe, coffee is a main ingredient, in addition to that particular flavor: the aroma that it gives you is indescribable!

For all this type of elaboration, without a doubt the raw material is essential. For this reason, I have opted for Malongo ground coffee . But if we continue with the bundt, another thing to take into account is the mold. And I have to be honest: never, and I mean never, have they come out as rich as in the Nordic Ware molds . When this mold fell into my hands I thought "How long did it take me to buy it! This mold is perfect for making your bundts come out simply spectacular. Ingredients

225g unsalted butter at room temperature

230gr. white sugar

4 eggs

100 ml of coffee

225g of flour

2 tablespoons baking powder (Royal baking powder)

a pinch of salt

A tablespoon of grated fresh ginger

Elaboration

1. Preheat the oven to 180º

2. Mix the butter and sugar until creamy and white.

3. Add the eggs one by one, lightly beaten. Do not add the next one until the previous one has not been perfectly mixed with the mixture.

4. Sift the flour, with the baking powder, ginger and salt into a bowl.

5. Add the flour to the mixture three or four times, alternating it with the coffee, beating until fully incorporated.

6. We grease the mold with our release spray .

7. Let's pour the mixture into the mold , distributing it well. We hit our counter a few times to make sure that the dough enters all the crevices of the mold and the air that the dough may contain comes out.

8. We bake for 50-60 minutes. We check with a needle before removing it from the oven.

9. Remove from the oven, let cool on a wire rack for 10-15 minutes.

10. Unmold, let the bundt cool on the wire rack until completely cold.

11. We serve on our cake stand and enjoy with a delicious coffee with milk.

Lamento decir que algo debe andar mal en las proporciones de ingredientes. Me ha sucedido exactamente lo mismo que al comentario anterior, ha quedado totalmente hundido en mi molde nordic ware y es la primera vez que me pasa con un bundt cake :-( da la impresión que hay demasiada levadura. Saludos
