Raquel, author of Los Tragaldabas , brings us a very special recipe today: a cake in the format that we like so much, the brilliant and delicious shape of a bundt, with the added flavour of an aroma that many of you enjoy every day, coffee. A fabulous idea to start the day!

 

I am a coffee enthusiast, I love it!!! I can almost say that I am addicted to it. It would be impossible to start the day without a hot coffee to activate my whole body. That is why in this bundt cake recipe coffee is a main ingredient, in addition to that very particular flavor: The aroma it gives is indescribable!

But if we continue with the bundt, another thing to take into account is the mold. And I have to be honest: never and I mean never, have they come out as delicious as in the Nordic Ware molds . When this mold fell into my hands I thought "How long did it take me to buy it! This mold is perfect for your bundt to come out simply spectacular. Its central chimney makes the heat spread perfectly during baking and the quality of its aluminum makes it one of the favorite pieces for all those passionate about the world of baking. Ingredients

225g unsalted butter at room temperature

230gr. white sugar

4 eggs

100ml of coffee

225gr of flour

2 tablespoons baking powder (Royal baking powder)

A pinch of salt

A tablespoon of grated fresh ginger

 

Elaboration

1. Preheat the oven to 180º

2. Mix the butter and sugar until it becomes creamy and has whitened.

3. Add the eggs one by one, beaten lightly. Do not add the next one until the previous one has been perfectly combined with the mixture.

4. Sift the flour, baking powder, ginger and salt into a bowl.

5. Add the flour to the mixture in three or four times, alternating with the coffee, beating until fully incorporated.

6. Grease the mold with our release spray .

7. Pour the mixture into the mould, spreading it evenly. Tap the work surface a few times to make sure that the mixture enters all the crevices of the mould and that any air that may be in the mixture escapes.

8. Bake for 50-60 minutes. Check with a needle before removing from the oven.

9. Remove from the oven and let cool on arack for 10-15 minutes.

10. Unmold and let the bundt cool on the rack until completely cold.

11. We serve it on our cake stand and enjoy it with a delicious coffee with milk.

Lamento decir que algo debe andar mal en las proporciones de ingredientes. Me ha sucedido exactamente lo mismo que al comentario anterior, ha quedado totalmente hundido en mi molde nordic ware y es la primera vez que me pasa con un bundt cake :-( da la impresión que hay demasiada levadura. Saludos
