Can you imagine what the sweetest Christmas tree would be like? It would surely be made of tender branches, with a flavor as delicate as these pistachio Christmas madeleines, with which I suggest making a perfect Christmas fir to preside over the table this holiday season. That is, if it doesn’t disappear the moment you bring it to the table, because the temptation is enormous!

Making this sweet tree is really easy. You will only need a polystyrene cone and a Buyer madeleine mold. One mold or several! Because if you like the idea, you can make the tree as big as you want to cover it with all the madeleines you've baked. It will make a wonderful Christmas fir and the best excuse to keep the little ones busy sticking the cupcakes on, although you’ll have to watch that they don’t eat them before placing them!

Ingredients

For the pistachio madeleines

  • 2 large eggs
  • 10 g of vanilla sugar
  • 100 g of sugar
  • 150 g of all-purpose flour
  • 6 g of baking powder (chemical leavening like Royal)
  • 75 g of butter
  • 30 g of pistachio paste
  • 40 g of pistachios finely chopped (in small pieces)

For the finishing

  • 80 g of white chocolate
  • 1 tablespoon of powdered sugar

Preparation

Preparation of the pistachio madeleines

  1. Melt the butter in a saucepan or in the microwave, being careful not to burn it,
  2. When it is melted, add the pistachio paste and stir well to combine.
  3. Now put the flour, the baking powder and both sugars in the bowl of your KitchenAid stand mixer and fit the whisk attachment.
  4. Start beating at low speed and add the eggs one at a time. Beat for a few minutes, until you see that all the ingredients are well incorporated and air has been added to the mixture.
  5. Without stopping the mixer, gradually incorporate the mixture of butter and pistachio paste. Continue beating until fully integrated.
  6. When ready, cover the dough directly with plastic wrap so it doesn’t dry out. Refrigerate and let the dough rest for 1 hour.
  7. Grease the De Buyer madeleine mold with butter and sprinkle a little flour over it.
  8. Take the dough out of the refrigerator and put it into a piping bag or into the Le Tube pastry gun by Buyer. Distribute the dough into the mold cavities, filling up to 3/4 of their capacity.
  9. Sprinkle the chopped pistachios on top and place the mold in the refrigerator so the dough cools a bit more.
  10. Preheat the oven to 210 °C and when it has reached temperature and is hot, put the madeleine mold in and immediately lower the temperature to 170ºC.
  11. Bake for about 6-7 minutes, until you see the edges browning and the cupcakes taking their characteristic shape.
  12. Remove the mold from the oven and let it cool for 5 minutes on a rack before unmolding the madeleines.

Finishing and assembling the madeleine Christmas tree

  1. Melt the white chocolate in the De Buyer double boiler.
  2. Dip the tip of the madeleines, one by one, into the melted chocolate and place them on a rack or on a sheet of baking paper until the chocolate hardens.
  3. Skewer the madeleines with wooden toothpicks into a polystyrene cone, so that the cone is covered by the madeleines.
  4. To finish, before taking it to the table, dust the madeleine fir with powdered sugar. Happy holidays!

¿Os imagináis cómo sería el árbol de Navidad más dulce? Seguro que estaría hecho de tiernas ramas, con un sabor tan delicado como el de estas madeleines de pistacho navideñas, con las que os propongo hacer un abeto de Navidad perfecto para presidir la mesa estas fiestas. Eso si no desaparece en cuanto lo llevéis a la mesa, ¡porque la tentación es enorme!

Hacer este árbol tan dulce es de lo más fácil. Tan solo necesitarás un cono de poliestireno y un molde para madeleines de Buyer. ¡Un molde o varios! Porque si la idea te gusta, puedes hacer el árbol tan grande como quieras, para cubrirlo con todas las madeleines que hayas hecho. Resultará un abeto de Navidad estupendo y la mejor excusa para tener a los peques entretenidos pinchando las magdalenas, ¡aunque tendrás que vigilar que no se las coman antes de colocarlas!

Madeleines de pistacho navideñas

Ingredientes

    • 2 huevos grandes
    • 10 g de azúcar avainillado

    • 100 g de azúcar

    • 150 g de harina común
    • 6 g de impulsor (levadura química tipo Royal)
    • 75 g de mantequilla
    • 30 g de pasta de pistacho
    • 40 g de pistachos picados finamente (en trozos pequeños)

    • 80 g de chocolate blanco
    • 1 cucharada de azúcar glasé

    Preparación

      1. Funde la mantequilla en un cazo o en el microondas, con cuidado que no se queme,
      2. Cuando esté fundida, añade la pasta de pistacho y remueve bien para que se mezcle.
      3. Ahora pon la harina, la levadura y los dos azúcares en el bol de tu robot de cocina KitchenAid y coloca el globo batidor.
      4. Empieza a batir a potencia baja y añade los huevos de uno en uno. Bate durante unos minutos, hasta que veas que todos los ingredientes se han integrado bien y se añade aire a la mezcla.
      5. Sin dejar de batir, incorpora poco a poco la mezcla de la mantequilla con la pasta de pistacho. Sigue batiendo hasta integrar por completo.
      6. Cuando esté listo, tapa a piel la masa con film transparente, para que no se reseque. Lleva a la nevera y deja que repose la masa durante 1 hora.
      7. Engrasa el molde para madeleines De Buyer con mantequilla y espolvorea por encima un poco de harina.
      8. Saca la masa de la nevera y ponla en una manga pastelera o en la pistola de pastelería Le Tube de Buyer. Reparte la masa en las cavidades del molde, llenando hasta 3/4 partes de su capacidad.
      9. Espolvorea los pistachos picados por encima y pon el molde en la nevera, para que la masa enfríe un poco más.
      10. Enciende el horno a 210 °C y cuando el horno haya alcanzado la temperatura y esté caliente, pon el molde de las madeleienes y enseguida baja la temperatura a 170ºC.
      11. Hornea durante unos 6-7 minutos, hasta que veas que se doran los bordes y las magdalenas tienen su forma característica.
      12. Saca el molde del horno y deja que enfríe durante 5 minutos sobre una rejilla, antes de desmoldar las madeleines.

      1. Derrite el chocolate blanco en el cazo para baño maría De Buyer.
      2. Sumerge la punta de las magdalenas, una a una, en el chocolate fundido y déjalas sobre una rejilla o encima de una hoja de papel de hornear hasta que el chocolate endurezca.
      3. Clava las magdalenas con palillos de madera en un cono de poliestireno, de forma que el cono quede cubierto por las madeleines.
      4. Para acabar, antes de llevarlo a la mesa, espolvorea el abeto de madeleienes con azúcar glasé. ¡Felices fiestas!
