You can give a twist to a salad in the easiest way. I strongly encourage you to try this arugula salad with walnuts and toasted and caramelized raisins and crunchy ham , together with the apple is a great combination. And those roasted and caramelized nuts... Oh, my God! They are delicious!

Despite having to caramelize the walnuts and raisins, the preparation of all this is very quick: the vinaigrette is made in a few minutes, and the dish assembly takes one more minute. I'm not cheating on you! As for the crunchy ham, you can also sauté it in the pan, or you can decide to prepare it in express mode, in 30 seconds in the microwave. Do you dare to try?

Ingredients (for 2 people)

  • 40 gr of arugula
  • 1 firm golden apple
  • A good handful of nuts
  • A handful of sultanas
  • A generous tablespoon of sugar
  • 5 tablespoons of oil (EVOO)
  • 3 tablespoons of Modena vinegar
  • A few slices of Serrano or Iberian ham

Preparation

First we prepare the toasted walnut vinaigrette, which is delicious:

  1. In a skillet pan, place the walnuts and raisins over low heat. When the pan starts to get hot, add the tablespoon of sugar and mix by stirring the pan.
  2. When the sugar begins to melt, the raisins change color (they turn light brown and swell) and the walnuts look toasty (and the sugar shines around them), we stop the heat and immediately add the oil. Stir with a wooden spoon and let cool.
  3. When it is warm, we incorporate the balsamic vinegar.

We make the crispy ham:

Crispy ham can be made in three different ways:

1) You put it directly in a pan and heat it up. You will see that it will lose the fat and it will become drier. Remove it from the pan when it's done.

2) In the dehydrator , which after all what it does is dry out. It is not a method that you can apply if what you want is to eat the salad now, but it is something to keep in mind whenever you have a hole (or a tray) left over when you are using the dehydrator for other purposes. Take advantage of the fact that you have it running to make ham crunchy and have it for lunch or dinner (surely as a decoration for creamy toasts, in salads, to accompany grilled fish... you will use it more often than you can imagine now).

3) In the microwave : although I'm not a big fan of using it, it's certainly a great help when it comes to drying Serrano or Iberian ham: put the slices of ham on a plate and microwave at medium speed. The time will depend on the amount you put but in less than a minute you will have it ready. Personally, for this salad, I leave it dry but a flexible point. Do not leave the side of the microphone and remove it when you see it at its point.

Prepare the salad:

  1. With the help of a mandolin , cut the apple into slices, about 3 mm.
  2. On the plate, apply a generous helping of arugula, then arrange the apple slices, pour the vinaigrette, with a generous amount of raisins and walnuts all over the plate and finally crown with the slices of crispy ham.
  3. Enjoy it. I hope a lot!
