We are in soup season and creamy soups that comfort body and spirit. That's why we bring this succulent red lentil cream with a spiced and reasonably oriental set of ingredients.
The base of this soup is red lentils, a variety used a lot in India and Indochina. Orange when raw, they lose most of their color when cooked. They come without skins and split in half, so they cook quickly and do not require soaking.
Additionally this soup contains coconut milk, which makes it a bit heartier than it might seem. We complete the flavors with cumin and cinnamon, an unbeatable combination. I used my Magimix Cook Expert because it has a fantastic option, Creamy Soup, in which you just add the chopped vegetables with the liquids and seasonings, and the machine cooks the Set and blends it at the end.
In any case, we indicate the usual method, without a machine, to prepare the cream, which has no difficulty. Let's go.

Ingredients
- 250 g cauliflower
- 150 g red lentils
- 2 medium carrots
- 2 garlic cloves
- 1 tbsp. ground cumin
- 1 tsp. turmeric
- 1 pinch ground cinnamon
- 1 good sprinkling ground white pepper
- 500 ml vegetable stock or water
- 400 ml coconut milk
- Salt to taste
Preparation
- Peel the carrots and cut them into slices. Do the same with the garlic cloves. Set aside.
- Wash the cauliflower and break it into pieces, including the stems.
- Weigh the lentils and measure the seasonings and liquids.
Cooking without machine
- Place all the ingredients in a saucepan and bring to a boil. Cook for at least 30 minutes, until the vegetables are tender.
- Blend to desired texture and season with salt.
Cooking with Magimix Cook Expert
- Put all the vegetables in the steel pot, along with the seasonings and liquids. Make sure they are almost covered with liquid so they cook well.
- Select the Cooking > Creamy Soup program and set 40 minutes.
- When the program finishes, salt to taste. The cream is thick; if you want it thinner, add water to your liking.
- Serve the soup, already blended. I topped mine with some shavings of curly kale chips (kale for the millennials).
