A few days ago I shared a savory clafoutis recipe; today I return to the more traditional version, although with some variations that make this cherry tart a delicious sweet, with a crunchy and very aromatic touch. This cherry clafoutis with almonds and orange blossom water is perfection in every bite, whether you leave the cherries with their stones or prefer them pitted.

You’ll see that it’s a very easy tart to prepare and perfect at this time of year, when cherries are at their peak sweetness. The biggest difficulty may be pitting the cherries, if you want to add them without stones. Traditionally they are placed whole because that way their flavor is more intense and they don’t release juice. But in the end the decision is always up to the person making the tart.

To make the final result more aromatic and crunchier than the original clafoutis, we add orange blossom water to the batter and scatter some sliced almonds on top. Lightly toasted they are incredible! By adding almond flour and baking the cherry tart in the Buyer deep stainless steel baking tray, we get a clafoutis with more body. And you’ll see that the orange blossom water leaves a wonderful aroma in the kitchen and gives an amazing note to this dessert.

You can enjoy it on its own, as is, but I love serving it warm with a generous scoop of vanilla ice cream. You’ll see how this cherry clafoutis with almonds and orange blossom water is a delight.

Ingredients

  • 500 g cherries (with or without stones, as you prefer)
  • 3 large eggs
  • 80 g honey (you can replace the honey with the same amount of brown sugar or panela)
  • 100 g almond flour
  • 50 g all-purpose flour
  • 30 g melted butter
  • 200 ml whole milk
  • 100 ml heavy cream 35% fat
  • 1 tablespoon orange blossom water
  • 1 teaspoon vanilla extract
  • A pinch of fine salt
  • Sliced almonds (for decoration)
  • Powdered sugar (optional, to taste)

Preparation

  1. Wash the cherries, remove their stems and set aside. If you prefer to use them pitted, pit them. You can use the OXO cherry and olive pitter to go faster.
  2. Preheat the oven to 180º C, top and bottom heat.
  3. Place in the bowl of your KitchenAid mixer the eggs with the honey or brown sugar and beat with the balloon whisk until the mixture is foamy and has increased in volume.
  4. Add the flours and salt and stir gently so everything mixes well.
  5. Now add the melted butter, the milk, the cream, the vanilla extract and the orange blossom water and stir gently to incorporate all the ingredients.
  6. Grease your Buyer deep rectangular stainless steel baking tray with a little butter or non-stick spray.
  7. Place the cherries in the tray, distributing them evenly.
  8. Pour the batter gently over the cherries and sprinkle the sliced almonds on top. That will give the clafoutis a delicious crunchy touch.
  9. Place the tray in the oven and bake for about 35–40 minutes, until the surface is golden and the center is slightly soft.
  10. Remove the clafoutis from the oven and let it cool a bit on a rack.
  11. When it has cooled, dust a little powdered sugar on top before bringing it to the table.
  12. And now comes the best part: serve the clafoutis and accompany it with a scoop of vanilla ice cream or a spoonful of whipped cream. You can also serve it plain. Enjoy!

Suggestions

  • For a traditional clafoutis, cherries are usually added unpitted, because leaving the stone in gives a more intense flavor. But if you prefer a milder flavor and texture, you can use pitted cherries. To pit them faster, you can use the OXO cherry and olive pitter, which makes the job much easier.

Si hace unos días compartía una receta de clafoutis salado, hoy vuelvo a la versión más tradicional, aunque con algunas variaciones que hacen de esta tarta de cerezas un dulce delicioso, con un punto crujiente y muy aromático. Este clafoutis de cerezas con almendras y agua de azahar es la perfección en cada bocado, tanto si ponéis las cerezas con hueso como si preferís que estén deshuesadas.

Veréis que es una tarta muy sencilla de preparar y perfecta en esta época del año, en que las cerezas están en su punto de dulzor. La mayor dificultad que puede tener es el trabajo de deshuesar las cerezas, si es que las queréis añadir sin hueso. Tradicionalmente, se ponen enteras porque de esta forma su sabor es más intenso y no sueltan jugo. Pero al final la decisión es siempre de quien prepara la tarta.

Para que el resultado final sea más aromático y crujiente que el clafoutis original, añadimos agua de azahar a la masa y repartimos por encima unas almendras fileteadas. ¡Tostaditas están increíbles! Al añadir la harina de almendra y hornear la tarta de cerezas en la bandeja honda de acero inoxidable de Buyer, conseguimos que el clafoutis tenga más cuerpo. Y ya veréis que el agua de azahar deja un aroma maravilloso en la cocina y le da un punto increíble a este postre.

Podéis tomarlo solo, tal cual, pero a mí me encanta servirlo tibio y acompañado de una buena cucharada de helado de vainilla. Veréis como este clafoutis de cerezas con almendras y agua de azahar es una delicia.

Clafoutis de cerezas con almendras, miel y azahar

Ingredientes

  • 500 g de cerezas (con o sin hueso, como tú prefieras)
  • 3 huevos grandes
  • 80 g de miel (puedes sustituir la miel por la misma cantidad de azúcar moreno o panela)
  • 100 g de harina de almendras
  • 50 g de harina común
  • 30 g de mantequilla fundida
  • 200 ml de leche entera
  • 100 ml de nata fresca 35% m.g.
  • 1 cucharada de agua de azahar
  • 1 cucharadita de extracto de vainilla
  • Un pellizco de sal fina
  • Almendras fileteadas (para decorar)
  • Azúcar glasé (opcional y a tu gusto)

Preparación

  1. Lava las cerezas, quítales el rabito y reserva. Si prefieres ponerlas sin el hueso, deshuésalas. Puedes usar el deshuesador de cerezas o aceitunas OXO para ir más rápido.
  2. Precalienta el horno a 180º C, con calor arriba y abajo.
  3. Pon en el bol de tu robot KitchenAid los huevos con la miel o el azúcar moreno y bate con el batidor de globo hasta que la mezcla espume y aumente de volumen.
  4. Añade las harinas y la sal y remueve suavemente para que se mezcle todo bien.
  5. Ahora incorpora la mantequilla fundida, la leche, la nata, la esencia de vainilla y el agua de azahar y remueve con suavidad para integrar todos los ingredientes.
  6. Engrasa tu bandeja rectangular honda de inox para horno de Buyer con un poco de mantequilla o con spray desmoldante.
  7. Coloca las cerezas en la bandeja, distribuyéndolas con gracia.
  8. Vierte suavemente la masa sobre las cerezas y reparte las almendras fileteadas por encima. Eso le dará al clafoutis un toque crujiente delicioso.
  9. Lleva la bandeja al horno y hornea durante unos 35-40 minutos, hasta que veas que la superficie está dorada y el centro está ligeramente blando.
  10. Saca el clafoutis del horno y deja que enfríe un poco sobre una rejilla.
  11. Cuando haya enfriado, espolvorea un poco de azúcar glacé por encima antes de llevarlo a la mesa.
  12. Y ahora llega el mejor momento: reparte el clafoutis y acompáñalo con una bola de helado de vainilla o con una cucharada de nata montada. También puedes servirlo solo. ¡Disfruta!
