Ingredients

For the pears:

  • 4 pears conference
  • 10 g brown sugar
  • 15g butter
  • Juice of 1/4 lemon
  • 1 vanilla pod
  • 3 star anise
  • 50 ml of water

For the berry jam:

  • 300 g frozen berries
  • 50 g brown sugar
  • Juice of half a lemon
  • 20 ml of water

At your service:

  • Vanilla and macadamia ice cream
  • fresh mint leaves

Elaboration

  1. We prepare the jam: For the jam, we mix all the ingredients for it in a saucepan and cook over medium-high heat for 10 minutes. It is recommended to make the jam in advance so that it is cold when serving (either a few hours before or even the day before).
  2. Put the Dupla frying pan on the heat, over low heat, so that it begins to warm up. While you prepare the pears, turn them over after a couple of minutes, this way both sides are heated (you can also separate the two pans and put both on independent heats).
  3. We prepare the pears: Cut the pears in half, peel them and remove the seeds and stem. We place them in the Dupla Prior de Bra frying pan , distributed throughout the pan and with spaces between them.
  4. Add sugar, diced butter, lemon juice, water, halved vanilla pod and star anise over the pears in the pan. We close the pan and cook over medium heat for 5-10 minutes.
  5. After that time, we turn the pan, making sure that all the pears have been turned correctly, and cook an additional 5 minutes. We stop the fire and let them lose temperature.
  6. Presentation of the dish: Once the pears are ready, we serve them warm or cold taken from the refrigerator. We place two halves for each diner and add a couple of tablespoons of red fruit jam. Optionally, we serve with a scoop of vanilla ice cream and macadamia nuts and decorate with mint leaves to give a fresh touch to the dish.

Grades:

  • You can prepare everything the day before serving it, but if you do so, remove it from the refrigerator a few hours before, so that the pears are tempered.
  • Don't overdo it with the vanilla ice cream, if using it. The protagonist should be the pears, and the contrast with the intensity of that red fruit jam.
  • Almonds also go very well with pears. You can decorate with some flaked toasted almonds.
