On the occasion of WMF's new launch of the innovative FusionTec pots, we invited Julio to make a perfect recipe for these upcoming Christmases or to impress at any formal meal: a delicious monkfish caldereta or suquet with clams. Here is the video recipe, and below you have the list of ingredients and the steps to follow for its preparation.

Ingredients:

For the picada:

  • 4 garlic cloves
  • 12 hazelnuts
  • 3 medium-large ñoras (seeded and soaked)
  • 2 pinches of natural saffron

For the suquet:

  • 8 pear-shaped tomatoes
  • 1.5 l fish stock
  • 1 glass of white wine
  • 800 gr potatoes (for boiling)
  • 100 gr peas
  • 1.5 Kg cleaned monkfish tail
  • 1/2 Kg clams
  • cs Flour
  • cs Olive oil
  • cs Salt
  • cs Pepper

Preparation

Preparation of the picada:

  1. Scrape and collect the flesh of the soaked ñoras discarding the skins.
  2. Pound all the ingredients in the mortar and make a paste, loosen with a little stock.

Preparation of the monkfish suquet:

  1. Grate the pear tomatoes and sauté them in the FusionTec pot with a little olive oil. Cook, stirring often, until it becomes a dry paste.
  2. Add the picada while continuing to stir.
  3. Moisten with the white wine until the alcohol evaporates and add the potatoes cut into bite-sized pieces, salt and cover with the stock. Leave to cook for about 15 minutes, moving the pot from time to time.
  4. In a pan, salt the monkfish, coat with flour and lightly brown in plenty of oil.
  5. Add the pieces of monkfish into the pot with the suquet and continue cooking over low heat for another 10 minutes (check the doneness of the potatoes).
  6. Five minutes before the end of cooking, add the peas and the clams and adjust the salt, cover the pot so the clams can open.
  7. After those five minutes, ready to serve!

This recipe is truly delicious. Tasty, healthy and light, perfect to impress on any occasion.
