- 1 fresh or farmhouse-style butifarra
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 large green asparagus spear
- 3 slices of Tomme herbal cheese
- A handful of fresh basil leaves
- Dried thyme
Preparation
- Wash the peppers and cut them into roughly 1 cm strips using a sharp knife, such as the De Buyer Asian chef’s knife. Set aside.
- Remove the tough end of the asparagus and slice it lengthways into four strips.
- Brush your De Buyer iron skillet with holes (ideal for grilling vegetables) with oil and place it on the barbecue. When hot, add peppers and asparagus, sprinkle with dried thyme and sauté.
- While the vegetables grill, cut the cheese into rectangles as shown in the video.
- Spiral the butifarra and insert the cheese pieces inside following the coil.
- Add basil leaves likewise, and repeat with the roasted peppers and asparagus until well filled.
- Secure everything with three stainless‑steel skewers to hold the spiral together.
- Place the spiral carefully in your Mineral B cast‑iron skillet and let it cook.
- Once seared, turn it over and cover it with the De Buyer cooking cloche, so it retains all its aroma and juiciness.
- When ready, remove the spiral carefully, take out the skewers and slice into portions. Enjoy every bite!
