We often look for a topping as juicy as it is delicious to go with crepes and waffles (or to turn a simple yogurt into a god-level dessert!), and this recipe for cranberry sauce super easy to make, it takes just a few minutes to prepare, and it's delicious.

It's perfect also for filling or decorating cakes, for sponge cakes and bundt cakes, or for your cupcakes and muffins: Often, recipes that include blueberries add the fresh fruit directly to the batter, counting on it to roast and release its juices as it bakes. That’s undoubtedly delicious, but instead you can also stir this blueberry sauce into the batter, and you’ll see it results in a sweeter touch than fresh blueberries alone, while ensuring the fruit is more broken down, making fantastic pies and cakes.

To make it you can use fresh or frozen blueberries (fresh is always better, but it’s very convenient to have a bag of blueberries in the freezer for the day you might need them or when they’re out of season).

To make the cranberry sauce:

Ingredients:

  • 1 1/2 tbsp lemon juice
  • 1 1/2 tsp cornstarch
  • 2 cups of fresh or frozen blueberries
  • 2-3 tbsp of sugar
  • 3 tbsp of water

Preparation:

  1. In a bowl, mix the freshly squeezed lemon juice and cornstarch, and set aside.
  2. In a large saucepan, add the blueberries, sugar, and 3 tablespoons of water. Set over medium heat and bring to a boil. Reduce the liquid while stirring and lower the heat to low.
  3. Add the lemon juice and cornstarch mixture, stirring constantly. Stir until the sauce thickens slightly and the blueberries have softened, then remove from the heat.
  4. Keep it covered to keep the sauce hot if you're going to serve it with crepes or waffles. It's delicious! Or set it aside and let it cool if you're going to use it as a filling for cakes.

How to use cranberry sauce?

  • Pour it into Fritters and pancakes, it's a winning combination with the sauce, whether cold or hot.
  • It is a perfect sauce for fill waffles (and even more seductive if you do them as a couple!).
  • Use it to fill crepes. If everyone at home has a sweet tooth, you can serve those crepes with blueberry sauce as well as whipped cream.
  • In cheesecakes: pour the sauce into the cheesecake mixture and stir, before pouring it into the pan, thus making a cheesecake filled with cranberry sauce. Or you can use the sauce just as an accompaniment: prepare your cheesecake, and when serving accompany the cheesecake with a mini-casserole or sauce boat with the cranberry sauce, so that diners who want to can accompany the cake with this wonderful sauce.

  • To decorate other dishes: go ahead and try new combinations, like pairing a soft goat cheese with this sauce; it’s also ideal for dressing (for example) certain baby greens and strawberry salads, or a teaspoon of this sauce can provide a wonderful contrast when plating a fish dish.
