Easy and quick to make, roasted pineapple with cinnamon becomes a Sunday dessert due to its exoticism and color, but I assure you that it is a recipe to consider making any day of the week, for dessert or breakfast in the morning.
You can grill or barbecue pineapple, and I assure you that you will be a success. But always serve it with a little yogurt or ice cream! It's the perfect touch to round off the dish.
Ingredients
- Fresh pineapple
- Sugar (white, brown or both)
- Cinnamon
To accompany (optional, to choose):
- Sweetened natural yogurt or coconut yogurt
- Cream, vanilla or coconut ice cream
Preparation
- Cut the pineapple into 1cm slices, and decide whether to cut these in half (making half moons), or prefer to serve it in whole slices.
- Sprinkle the sugar on top of each slice, using your fingers but somewhat generously (you can use white sugar, brown sugar, a mix of both, or even use panela if you want to add more nuances to the pineapple).
- Now sprinkle cinnamon generously over the entire slice, just like with the sugar.
- Heat a cast iron grill . When it is hot, place the pineapple slices on it, on the side where you had the sugar and cinnamon.
- While that side is cooking, take the opportunity to sprinkle the second side with sugar and cinnamon.
- Wait for the first side to be golden brown, and when it is, turn the slices over, and grill the pineapple on the other side. Remove to a tray or directly onto plates when done.
- Serve while still warm or lukewarm, with yogurt or ice cream. You can serve the pineapple on a plate and the yogurt in a separate bowl, pour the yogurt over the pineapple, or cut the pineapple into small pieces (cubes) and serve the grilled pineapple in a yogurt bowl.
Grades
- It is important that it be made of iron, to be able to reach a high temperature and really roast the pineapple.
- The pineapple is placed on the grill as is, without using any oil or butter (although you can use a little butter too, if you prefer, although it is not necessary... but do not use any oil).
- This is an ideal recipe to make on the barbecue too. Whether you enjoy it on the terrace in winter or you want a light recipe during the summer, you will see how delicious grilled pineapple is on the barbecue!
- Sugar will help caramelize and brown the pineapple more easily, but you can leave it out if you prefer to reduce it in your diet.
- You'll know the pineapple is done when it turns brown or golden. If the grill is hot, it will cook quickly, so don't leave it too far away from you.
