A puff pastry with chocolate, caramel and pastry cream . Do you know how delicious it is? The truth is that this recipe, if you use store-bought refrigerated dough, is very easy to make, and it is super pretty to look at and delicious to enjoy.
As a snack or breakfast, you will enjoy this little vice piece by piece. But hey, we've earned it too, right?
You can make the puff pastry as big as you like, but it is important to control the thickness of the layers, because if you over-fill it, it will spread too much when it swells in the oven.
Ingredients
- 500 g of refrigerated puff pastry (we will need to make 3 circles of 26 cm each)*
- 70 g of chocolate cream
- 70 g salted caramel
- 50 g of pastry cream**
- 1 beaten egg for brushing
*You can buy a rectangular dough and cut it into small circles, or buy 3 round refrigerated doughs directly. If you do this, you will easily need more filling, since the surface to be filled will be larger.
**You can buy the pastry cream or make it very quickly at home. In this post we tell you how.
Preparation
- Preheat the oven to 200°C (with heat from above and below), or to 180°C if using a fan-assisted oven.
- Divide the puff pastry into three portions and stretch each piece into three circles of 26 cm in diameter.
- Place one of the puff pastry portions on baking paper, or directly on a non-stick oven-safe pan or baking tray (such as a cookie sheet or even a Le Creuset pizza pan) . Spread half of the chocolate over the entire surface of the circle, in a thin layer.
- On top of the chocolate, spread half of the salted caramel in another thin layer. Then, spread half of the pastry cream thinly over the caramel.
- Place the second puff pastry disk on top of the pastry cream.
- Repeat the process of arranging the filling layers: spread the rest of the chocolate, the salted caramel and then the remaining pastry cream, always and above all in thin layers.
- Then, place the third layer of puff pastry.
- Place a 5cm diameter glass in the centre of the top dough, with the glass upside down, and press lightly.
- Cut the dough into eight equal portions around the glass. This is like making sun rays: starting at the edge of the glass, draw straight lines to the outer edge.
- Once the cuts are made, take one portion and twist it counter-clockwise twice, pressing the ends together.
- Repeat the previous step with the next piece, but turning each portion in different directions (turn one strip twice to the right, turn the next strip twice to the left... and so on until you turn them all).
- Remove the glass and paint the entire star with beaten egg.
- Place in the preheated oven and bake for 30 minutes, or until the star has a deep golden color and the dough looks cooked.
- Remove from the pan and sprinkle with icing sugar.
- Serve hot or cold, it's delicious either way.
