Baked potatoes are always a wonderful option to accompany any dish. Whether whole, cut into thick slices or baker-style, diced or in wedges, with a simple dressing of oil, salt and pepper or with whatever aromatic herbs you have on hand, they are the perfect complement on your table. That's why I'm sure these crispy parmesan roasted potatoes will fly off the plate as soon as you serve them.

Since this is a recipe with barely 4 ingredients in which the potato is the star, make sure to choose the best variety, a potato that becomes soft when roasted but doesn't fall apart, like Kennebec. Add an extra virgin olive oil and a good parmesan and the result will be perfect!

Here is the crispy parmesan roasted potatoes recipe, which is so simple I'm not sure it can even be called a recipe.

 

Ingredients

  • 2 kg large potatoes, Kennebec variety
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons sea salt
  • 50 g finely grated parmesan cheese

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash and dry the potatoes, rub them with the olive oil.
  3. Place them in a large roasting pan and sprinkle the salt over them.
  4. Bake for 1.5 hours (or until done), turning them every 20 minutes.
  5. Remove the pan from the oven, cover the potatoes with the parmesan and bake 5 minutes more, until crispy.
  6. Serve immediately, and enjoy!

Notes

  • Season the potatoes to your taste. With freshly ground black pepper, with a few sprigs of thyme or rosemary, with oregano, with chopped garlic or onion... Make the recipe your own!
  • Nothing beats the Microplane Zester for grating cheese. Watch out for its relentless blade! You'll grate a lot of parmesan in no time and get a light, beautiful parmesan.
  • When you add the parmesan you can also put a bit of bacon or finely sliced ham, so it browns at the same time as the cheese and gives it a different touch. You can also do it with chorizo or blood sausage. It will surely be delicious.
