I'm bringing you a truly well-rounded recipe: bright and colorful, full of flavor, super easy to make, and perfect for dipping bread. What more could you ask for? We're talking about some peppers with egg... that you'll also make without oil!

If you like the taste of the roasted peppers, and if you love baked eggs, this combination is as simple as it is perfect. And hassle-free!, I can assure you of that too.

While it’s a recipe I picture for a carefree Sunday, a no-fuss summer, or for dinners at tuti pleni.... as an additional note I must say that it is a perfect recipe for Valentine's Day or for a date night, because the red pepper cut into slices resembles the shape of a heart, so you can declare your love (and your love for delicious recipes!) with this very tasty dish.

I'm sharing the recipe, and I'd love it if you give it a try. You can make it in the oven, or it's also ideal to make it in the BRA Dupla frying pan if you have it, then you'll roast and set the egg quickly without having to turn on the oven (I'll leave more details in the Notes at the end).

Ingredients

  • 1 red bell pepper (enough for 5 or 6 servings)
  • Free-range eggs (as many as the servings you plan to make)
  • Salt
  • Pepper
  • Olive oil
  • Herbs to taste (oregano, parsley, basil, dill, ...)

Preparation

  1. Cut the red bell pepper into half-centimeter-thick slices and arrange them in a baking tray with parchment paper or over the heat give the Bra Dupla Frying Pan (without parchment paper, directly in the Dupla pan, because it has an oven effect).
  2. Add a little salt and drizzle a little oil over the peppers.

If you make it on a baking tray in the oven:

  1. Roast the slices for about 8-10 minutes in the oven at 190 °C so they start to roast and become tender. After 10 minutes, remove the tray from the oven.
  2. Inside each slice of pepper, crack an egg. Season with salt, pepper, and spices to taste and return the tray to the oven for a few minutes, until the eggs are done (it’s a good idea to keep an eye on the oven so you can take them out when the whites are set but the yolk is still runny). It can take about 8–10 minutes.
  3. Dinner's ready! Remember to serve with bread and enjoy such an easy recipe.

If you do it in the Bra Dupla pan:

  1. Grill the pepper slices on the Bra Dupla frying pan, closing the pan and keeping it over the heat for about 8-10 minutes, so they start to roast and become more tender. Turn them after a few minutes on the heat, close it again, and after those 8-10 minutes over low/medium heat, open the pan.
  2. Inside each slice of pepper, crack in an egg. Season with salt, pepper, and spices to taste and cover again. The heat retained in the pan creates an oven effect that will set the eggs without using oil. It’s a good idea to uncover after about 3 minutes to check how they’re cooking, since we want the whites set but the yolk runny, so you can enjoy it with bread. If after 3-4 minutes the whites still haven’t set, cover again quickly so you don’t lose the retained heat, and check again after another couple of minutes. When it looks just right, turn off the heat and, using a thin spatula, serve on a plate.
  3. Dinner's ready! Serve with bread... and open your arms, because they'll want to hug you—it's that delicious (and with practically no oil!).

Notes

  • Instead of spices, you can serve the dish with arugula; it really goes well with it.
  • This recipe is ideal to cook over the fire with the Bra Dupla frying pan. In fact, it's ideal for that: the Dupla pan is a double pan that seals tightly, so you can create an oven effect to first roast the peppers, and the second step is also ideal in that pan, because without oil you let the eggs set and, since it's a non-stick pan, they don't stick at all. All of this without turning on the oven, with the resulting energy savings.
  • Because of the shape of the bell pepper slices, they look like hearts... So it could be a good idea for Valentine's Day.
