Today it's pasta day! A tasty and easy penne (macaroni) recipe with a sauce that adds lots of flavor. The title makes it clear, pasta with ricotta and pepper sauce... You're sure to want to enjoy Luisa's recipe, author of Cocinando con mi Carmela!

Sometimes (or should I say, almost always?) we're pressed for time, but that doesn't mean we can't create a great dish! Preparing a pasta dish is very quick, and giving it a special touch, making it stand out to really enjoy it, can be done with ingredients you'll easily have in the fridge.

So the other day, when I was making this delicious pasta at home, I thought of you: it's a recipe I wanted to share because it's easy to make and, besides, the main ingredient is pasta... Who doesn't like that? At home, just say the word "pasta" and everyone comes to the table without complaining.

You'll have the recipe ready quickly, in about 25 minutes (Did I say quickly, I meant "in no time"!), and to give it the flavor it has a sauce made from two vegetables and a ricotta cream. Success is guaranteed — in my house it always wins, both with kids and adults!

Ingredients

  • 400gr of penne or macaroni (100gr per person)
  • 1 red onion
  • Half a red pepper
  • Fresh chopped basil to taste
  • 400gr of ricotta sauce or cooking cheese
  • Olive oil
  • Salt and pepper
  • Parmesan cheese to taste

Preparation

  1. In a casserole with boiling water cook the pasta until tender, drain and set aside.
  2. Meanwhile, heat two tablespoons of olive oil in the skillet and sauté the onion, red pepper and basil, all chopped into small pieces. Leave them for about 10-15 minutes until the onion becomes translucent.
  3. Reduce the heat, add the cream cheese to the skillet and heat gently for a few minutes, without letting it come to a boil.
  4. Finally, mix the pasta with the previous cream, season to taste and serve immediately.
  5. Once you've served the plates, add a few fresh basil leaves and grated Parmesan cheese on top.

El requesón lo tenéis que comprar en cualquier establecimiento, puede ser queso de requesón y sino encontráis, podéis utilizar crema de queso para cocinar. En Mercadona tenéis ambos productos.
