I love preparing recipes with which to surprise, hence my recipe today, some fantastic mini hamburgers for those who love salmon. Personally, I really like to prepare them and thus vary the way of eating this delicious fish.
I know that you will be wondering how it can be to prepare fish burgers, it is very simple, you will see, it is important that the paste that we create to make the burgers is well seasoned and thus tasty, just like when we prepare the meat ones. This way we will achieve a fantastic end result.

INGREDIENTS (for 8 mini burgers)
For the salmon burgers:- 500 gr fresh salmon, clean, boneless and skinless
- ½ red onion finely chopped
- 1 clove of garlic minced very fine
- 1 teaspoon grated fresh ginger
- 2 tablespoons of soy sauce
- 1 tablespoon chopped coriander
- 6 tablespoons breadcrumbs
- Zest of 1/2 lemon
- 1 egg S/M
- Salt
- Pepper
- 8 hamburger buns
- arugula
- ½ red onion, sliced very thin
- ½ cucumber cut very finely into slices
- Coriander leaves
- extra virgin olive oil
- 3 tablespoons of mayonnaise
- 1 tablespoon Edmond Fallot Dijon mustard
- Fine zest of ½ lemon
ELABORATION:
- We start by preparing the dough for the hamburgers. To do this, cut the salmon into cubes and with the help of a food grinder, chop the salmon together with the egg, the lemon zest and the soy sauce, until you get a not too fine paste (come on, let there be little pieces).
- Pour the mixture into a bowl, add the chopped red onion, minced garlic, lemon zest, grated ginger and chopped coriander. Mix well and season with salt and pepper. Then add the breadcrumbs, mix well, cover with transparent paper and let rest for half an hour in the fridge.
- While the salmon pasta rests we prepare the sauce to accompany the hamburgers . To do this, in a bowl we mix the mayonnaise, the mustard -if you want it to be somewhat stronger in flavor you can add a little more mustard- and the lemon zest.
- It is also the ideal moment to cut very finely the red onion and cucumber that will accompany the hamburgers when they are assembled on the buns. I recommend that you do it with the help of a mandolin , you will get very thin slices this way. We reserve for the moment of assembly of the mini hamburgers.
- After half an hour we will form the mini hamburgers , if we see that the pasta is too soft we can add some more breadcrumbs. To form the mini hamburgers we will use our Gefu mini hamburger press (or the standard size one if you prefer), the ideal tool so that they all remain the same shape, size and weight. I recommend that when you unmold them, you arrange them on baking paper cut to an approximate size of the mini hamburgers so that it is easier to handle them.
- Once we have the mini hamburgers ready, we heat our Le Creuset grill , oil it with the help of a brush and cook them. It is important to cook them for 3-4 minutes on each side without constantly turning them over, and we will also take the opportunity to heat the buns open in half.
- Finally we assemble the mini hamburgers. To do this, we spread the interior of the lower half of the bread with sauce, we arrange on it some rocket and coriander leaves, on the green the freshly made salmon burger, we return to sauce and add some slices of onion and some cucumber slices, we close with the bread lid.

As you can see, hamburgers do not always have to be meat. This is my version of fresh salmon burgers, ideal for snacking or for dinner with friends, I can tell you that you will be very pleasantly surprised. They are really delicious!
