You already know how we like to make use of the casserole. From making soups and creams to cooking rice, making a good, hearty fabada or stew, preparing braises, cooking countless fish recipes or, of course, preparing meats a tutti pleni with very little effort. That's what we're aiming for today!
Today Rafa Antonín brings us the recipe to make some magnificent Iberian cheeks, a dish that will give you very little work in the kitchen and you'll get an extremely tender and juicy meat, with a delicious flavor.
To prepare the recipe use the Le Creuset casserole, a few initial steps on the stovetop to immediately put it in the oven, where the meat will cook by itself. We leave you with the video recipe, and below the written step by step. You'll see that with a few simple steps it's done! And it comes out perfect!
Ingredients (for 3-4 people)

3 or 4 boneless, fat-trimmed Iberian cheeks
- 1 onion
- 3 carrots
- 3 cloves of garlic
- 150 ml dry white wine
- 250 ml chicken stock
- Oil
- Salt and pepper
Preparation
- We season the cheeks with salt and pepper to taste. It's important that the seasoning is even.
- We pour a little oil into the casserole and put the cheeks into it. We hold and turn them until they brown.
- Meanwhile, we prepare the onion and carrots by cutting them into medium pieces.
- We crush the garlic without cutting it, so we can remove it whole later.
- We take the cheeks out of the casserole and set them aside on a plate.
- In the same casserole, still hot, add the vegetables to sweat. We also add a little salt.
- Once the vegetables have released all their water, we put the cheeks back into the casserole and add the dry white wine.
- Once the alcohol has evaporated, we add the vegetable stock.
- Put the covered casserole in the oven at 150ºC for 45 minutes.
- We take it out and transfer them to a frying pan (only the cheeks and the liquid) and let them rest for 1 hour.
- When we want to eat them, we can reheat them either on the hob or in the oven.
Notes
- We chose onion and carrot to prepare this recipe, but any other vegetable you have in the fridge or pantry, like celery, leeks, etc., would also work.
- You can accompany this dish with mashed potato; it will go perfectly. Or if you want to extend the recipe, you can make some noodles or rice, and you'll have a dish that will go a long way (noodles with cheeks will become a big favorite for the whole family!).
