How to make brookies: the recipe
Ingredients
For the cookie dough:
- 120 g wheat flour
- 110 g brown sugar
- 50 g white sugar
- 80 g unsalted butter, melted and slightly cooled
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 large egg
- 1/2 cup chocolate pieces
- 1/2 cup mini chocolate chips
For the brownie batter:
- 3 large eggs
- 1 cup of black cocoa (about 100 g)
- 1 tsp salt (5 g)
- 2 tsp vanilla extract
- 180 g unsalted butter
- 250 g white sugar
- 3/4 tsp baking powder (chemical yeast, approx. 3 g)
- 125 g common wheat flour
- 1 1/2 cups of chocolate pieces (approximately 250 g)
Preparation
We make the cookie dough:
- Sift the flour, baking soda and salt into a container. Booking.
- Use the KitchenAid mixer with the balloon attachment to beat the brown sugar, white sugar and melted butter for 1-2 minutes.
- Beat in the vanilla and egg, making sure they are well combined.
- Gradually add the reserved dry ingredient mixture until you obtain a homogeneous dough.
- Finish by adding the chocolate chips and chocolate pieces, mixing gently.
We make the brownie dough:
- In another bowl, sift together the flour, baking powder and salt.
- Beat the eggs, vanilla and cocoa powder with the mixer and paddle attachment.
- Melt the butter in a container that you can use in the microwave, mix in the sugar and heat for 30 more seconds to dissolve the sugar well.
- Combine the butter and sugar mixture with the previously beaten ingredients, mix on low speed until smooth.
- Add the dry ingredients and chocolate pieces, mixing until well combined.
Assembly and baking:
- Prepare the oven by preheating it to 180°C and line a 23x23 cm square mold with baking paper.
- Spread ¾ of the brownie batter on the bottom of the pan, using a spatula to distribute it evenly.
- With an ice cream scoop, distribute portions of the cookie dough over the brownie dough, leaving spaces uncovered.
- Add the rest of the brownie batter to cover any empty spaces and smooth the surface.
- Bake for 30 to 35 minutes or until the edges and most of the center are firm to the touch.
- Let cool in the pan on a rack before cutting into portions to serve. Remember that you can bake leftover cookie dough separately or freeze it for another time.
