Not only does it result in a beautiful train: this coconut cake recipe is a delicious bite, and very easy to eat thanks to the format in which it is presented. The Nordic Ware Train Nordic Exprés mold is wonderful! It gives you several long, narrow cakes with a divine design, which are super convenient to serve and eat, whether giving one carriage per guest, or cutting them into several bites each.

What about the cake? It’s a very classic, standard cake recipe that guarantees a good result — one of those cakes everyone likes and that’s a quick solution for any breakfast or snack. We add the coconut flavor this time with coconut extract, although if you like you can add a bit of oil and coconut flakes to the batter.

Also, the batter is distributed into the different cavities and bakes super quickly. You’ll see that in 20 or 25 minutes it’s perfectly baked!

Ingredients

This time we provide measurements in cups. You can convert them to grams or ml, but I assure you that if you try making the recipe directly with cup measures, you’ll prepare it much faster without needing to weigh anything: fill the corresponding measuring cup (the half-cup measure, the one-cup...) with the ingredient needed each time, and you’ll see how quickly you’ll prepare everything without measuring anything.

  • 1½ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • ¼ cup oil
  • 1 cup sugar
  • 1 egg
  • 1 ½ tsp coconut extract*


Optional decorations: white icing, colored chocolate shavings, coconut flakes, pretzel sticks, black licorice, M&M’s, gummy candies, mini chocolate chips, shredded coconut...

*We add the coconut flavor this time with coconut extract, although if you like you can add a bit of oil and coconut flakes to the batter (don’t overdo it, so as not to make it too dense or dry; especially compensate by adding coconut oil if you add shredded coconut).

Preparation

  1. Preheat the oven to 180 degrees C.
  2. Prepare the Tren Express Nordic Ware mold with baking spray or butter.
  3. Sift together the flour, baking soda, baking powder and salt. Set aside.
  4. Mix the sugar, oil and egg.
  5. Alternately add the flour mixture and the milk to the previous mixture. Mix well until completely integrated.
  6. Stir in the coconut extract.
  7. Pour the batter evenly into the prepared mold and bake for 15-25 minutes or until a toothpick inserted comes out clean.
  8. Let the cake cool in the pan on a rack for 10 minutes before unmolding.
  9. Present it on a platter surrounded by coconut flakes.
  10. Decorate the train as you like and bring it to the table!
