A few months ago Nordic Ware told us that the lovely Beehive mold would be discontinued. I couldn't believe it — it's so beautiful! With it you get adorable little cakes, fun little treats perfect for breakfast, to accompany coffee or for the kids' afternoon snack.
I personally love them, not just for the sweet, cheerful detail of their shapes, but for the size of each cake: they're perfect! They're easy to carry, present, and eat...
So we said: Let's grab them before they're gone! And we brought many Beehive pans. That was a few months ago, and we still have some, but we're now on the last batch, and we couldn't help sharing this delicious and easy-to-make recipe with you before we have to say goodbye to them.
But don't worry! If you don't have that pan, you can make this same recipe in other pans designed for baking, from the mini-muffin pan, to a Nordic Ware bundt pan, with which you can make a full-size cake.
Whichever format you choose, you'll see that it is a very simple but impressive recipe. I hope you enjoy it!
Cakes made in the Nordic Ware Beehive cakelet pan
Ingredients*
- 1 cup cornmeal
- 1 cup cake flour
- 1 tablespoon baking powder
- 2/3 cup sugar
- 1 teaspoon salt
- 1 ¼ cups milk
- 3 eggs
- 4 tablespoons melted butter
- ¼ cup honey
*For measurements, use a 240 ml cup measured with water.
Directions
- Preheat the oven to 190ºC.
- Prepare the Beehive pan with non-stick spray, making sure it’s evenly distributed with the help of a pastry brush.
- Sift the flour, and in a bowl mix all the ingredients. If you have the KitchenAid stand mixer, put all the ingredients in the bowl and mix with the flex edge beater at medium speed.
- Pour half the batter into the pan, filling each cavity to at most three quarters of its height.
- Carefully place the pan in the oven, in the middle rack, and bake for 14–18 minutes at 180ºC. You can check doneness with the Nordic Ware thermometer, or with a skewer: insert it into the center of the cake and if it comes out clean it’s ready.
- Remove the pan from the oven, let rest for 10 minutes and unmold, then let cool completely on a cooling rack.
- Repeat baking with the second half of the batter.
Et voilà! In a few minutes you'll be enjoying these mini-bites, which served with a little honey on top are not only a treat for the eyes but a pleasure for all the senses. Enjoy!

Notes
- You may already know that KitchenAid has released a new accessory, the ingredient sifter and scale. If you have a KitchenAid and want to use it, simply attach the sifter (in fact, you'll probably keep it attached because it's so handy!) and add the ingredients into it to weigh them as you go. The same accessory allows you to sift the flour while you add it to the machine bowl.

Hola. A qué harina de maíz se refieren? 1. Fécula de maíz, 2. Harina de maíz para polenta, 3. Harina de maíz para arepa. A todas las llaman con el mismo nombre y eso confunde.

Pero si quieres, en lugar de hacerlo en bizcochitos individuales, puedes hacerlo a modo de bizcocho entero. En ese caso, puedes usar cuaquier molde de Emile Henry por ejemplo (el redondo mismo o cualquiera que verás aquí: https://www.claudiaandjulia.com/collections/moldes-ceramicos), o en un molde bundt Nordic Ware (https://www.claudiaandjulia.com/collections/moldes-bundt).
