Beef Stroganoff Stew
This Stroganoff or Stroganoff is one of my favorite dishes. There is no single recipe and each one tends to give it a different touch.
We are talking about a Russian stew that is basically made with beef, mushrooms or mushrooms and onion in a cream sauce (and here comes the difference), which is seasoned in different ways. Some people add some very chopped gherkins and I usually do it, but not everyone likes it so this time I have chosen to leave them whole as a side dish. The flavor of the cream with the gherkins and the mustard is very special, love it or hate it, so if you don't dare, serve them as a side dish like I do today.
This dish also freezes very well so don't be afraid to make more and freeze what's left over for another day. A different touch? Serve it with pasta instead of rice and you'll be blown away at home.

Ingredients
- 300g mushrooms
- 2 tablespoons of extra virgin olive oil
- 500 g of veal fillets, tenderloin or high loin (it is important that the meat is tender)
- 2 purple onions
- 1 tablespoon tomato concentrate
- 50ml brandy or cognac
- 1/2 tablespoon dijon mustard
- 40ml chicken broth
- 300 ml of liquid cream
- Salt
- Pepper
- 3 tablespoons of butter
- Some fresh chives
- Some pickled gherkins
Preparation
- Cut the fillets into strips with the help of the Miyabi santoku knife . Season and reserve.
- Cut the mushrooms in half and then into slices with the help of the Miyabi shotoh knife.
- In a Revol cocotte, brown the meat over high heat in a little olive oil. Take out and reserve.
- In the same cocotte, melt the butter and sauté the finely chopped onion in it until well golden. Then sauté the mushrooms until they are very golden.
- Then return the meat, add the tomato concentrate and stir well. Add the brandy (or cognac or a little bit of port), and let it boil until it evaporates.
- Then add the mustard and cream and cook for 10 minutes. Season and add the broth. Let thicken. Finish with a little finely chopped fresh chives.
- Serve in these precious Revol dishes with boiled basmati rice and some straw potatoes, accompanied by pickled gherkins.

Hola a todos! Os pido disculpas, creo que hemos errado en algunos puntos pero hemos corregido creo ya todoas las dudas: ciertamente debíamos devolver la carne a la olla y lo de hervir se refiere a dejar que se evapore (veréis que deja de hervir al cabo de poco y podéis proseguir con el siguiente punto). Disculpad las molestias y, corregida la receta, os animo a probarla porque está… ¡De rechupete! Saludos!

Gracias por vuestros comentarios, efectivamente había un par de errores.
La cantidad de carne son 500gr y lo que se devuelve a la olla en el punto 5 es la carne, los champiñones se doran con la cebolla y ya no se sacan. Ya quedará modificado para no crear más confusión.

A ver la receta no está bien explicada. No dice en que momento se incorpora la carne y también nos dice que devolvamos los champiñones a la olla. ¿En que momento se retiran y como, si están mezclados con la cebolla?

No sé en qué momento se retiran los champis de la olla. En el punto 5 dice “devolver los champiñones a la olla…”.
