Miyabi kitchen knives are made according to traditional Japanese standards, following contemporary Japanese design lines (purity, grace, and elegance) under strict quality controls.

It takes more than 100 steps and 42 days to make a knife worthy of the MIYABI brand. Each knife passes from the hands of skilled craftsmen to yours, ensuring that you get the finest quality. We make the knives in Seki, the Japanese capital of samurai sword making since the 14th century. You get the best of both worlds: German engineering and Japanese craftsmanship, for great durability and razor-sharp edge retention.

Japanese cuisine values the importance of a good cut to preserve the flavor and texture of the most delicate preparations, such as sashimi. Aside from their incredible double edge, Miyabi knives are globally prized for their exceptional balance and the comfort of their handle.

The blade core is made of MicroCarbide MC63 steel, surrounded by 100 layers of two different types of stainless steel, creating a unique design on each knife. The blade is ice-hardened to -196ºC to achieve an extreme hardness of 63 Rockwell, resulting in a flexible and sturdy knife with a very long-lasting edge.

The handle, made of birch wood, provides a beautiful contrast with the shine of the steel, and the wood grain is different on each knife, making every piece unique. The shape of the handle retains the traditional Japanese "D" shape to ensure an extremely comfortable and secure grip.

The history of Miyabi

Miyabi is one of the best knife manufacturers located in Seki (Japan). In 2004, this factory was acquired by Zwilling J.A. Henckels, so we can say it combines the best Japanese tradition and craftsmanship with the best German engineering. As a result of this collaboration, some of the best Japanese kitchen knives have been created.)
