El August 15, coinciding with India's Independence Day, is celebrated as World Indian Cuisine Day, a cuisine that is becoming more popular every day, both for its culinary richness and for the increasingly well-known health benefits of using spices.

Por ello, hoy te traigo 10 popular Indian cuisine recipes, with which you'll have guaranteed success at home. I hope you enjoy them as many others already have!

Characteristics of Indian cuisine

Hindu cuisine is characterized by the use of a large number of spices and aromas. curry is surely its most emblematic spice blend, with that spicy touch used to prepare countless recipes, stews, and sauces. But there are so many other Indian culinary specialties that have become classics of international cuisine, from the well-known Tandoori chicken or Tikka Masala to their much-desired naan bread to accompany any meal — many of these names will surely sound familiar, right?.

In Indian cuisine you will find this all kinds of stews, which are often accompanied by rice, all kinds of legumes (chickpeas, lentils...) and make great use of vegetables, always seasoned with spices, curries or masalas.

Traditional Indian cooking recipes

1. Lamb korma (Indian stew in casserole)

I leave you with a delicious Korma, in its simplest version, a mild curry made with a yogurt base and even cream, achieving a creaminess you won't be able to resist.

Korma is typical of Northern India and can be prepared with lamb as well as chicken, beef or pork or even completely vegetarian; I also encourage you to add almonds, peanuts, or cashews and thus create your own version of Korma. A true delight for all the senses.

5. Prawn curry with coconut milk

Spices in Indian cuisine are essential; they determine the balance of the dish. The term “curry” generally refers to a stewed dish flavored with a spice mix particular to each recipe. There are several techniques: korma, balti, karhai… and all the southern curries which are more liquid and spicy!

The curry I'm bringing you is a Garam Masala recipe that you can prepare easily at home once you've obtained all the seeds to make it…. Or head to any Mini-Market on your corner and buy a jar of Curry Paste with the flavor and level of spiciness you prefer from the Patak´s brand (the one Jamie Oliver uses in all his recipes and which to me is the tastiest) and it will be great!!

6. Cauliflower koftas with mint and lime sauce

Koftas in India are served in curry or with a spiced sauce; they can even be accompanied by boiled eggs, steamed rice or some variety of Indian bread, such as chapati. In other Middle Eastern countries they're served with spiced sauces. In Greece these meatballs are served with yogurt or Tzatziki.

This recipe is a version of the vegetarian Koftas, so popular in India. They are made from cauliflower, potato, red lentils and are spiced with garam masala. These are juicy meatballs with a crunchy note thanks to the cashews and a sweet touch from the dates. They are served with a double sauce made of yogurt and a natural mint and lime syrup.

It's a very versatile recipe because you can enjoy them as a starter or appetizer or as a main course accompanied by basmati rice or they are a fantastic filling for a pita bread with the same sauce.

8. Red lentil soup

We're in soup season and creamy soups that comfort body and soul. That's why we bring this succulent red lentil soup with a spiced and reasonably Oriental set of ingredients.

The base of this soup is red lentils, a variety widely used in India and Indochina. Raw they are orange-colored and lose most of their color when cooked. They come without skins and split in half, so they cook quickly and don't require soaking.

What we know as a meatball is called a kofka, but since I’ve traveled to the world of spices and the most aromatic cuisine, I can’t call them anything else. And I was determined to christen my Le Creuset Tajine with this delicious recipe for lamb kofkas and eggs, and it’s not for lack of recipes to make in the Tajine; I could hardly decide. Something tells me that, just like with the wonderful smoker, I’ll develop an unconditional love for the Tajine.

Indian recipe book: the book "Made in India"

One of the best gifts I gave myself this year is undoubtedly the MADE IN INDIA Book, by Meera Sodha. Beyond being a book with a beautiful cover to look at and touch, different and carefully made like few others, it's a book of delicacy and traditionalism when it comes to Hindu cooking like few others.

Through its recipes, the author brings us her family's cuisine in its most authentic and traditional version, with tested, well-explained recipes that come out delicious. She also explains the whys of some recipes, or alternatives to make them as close to the traditional flavor as possible when some ingredient may be harder to obtain here, all in a fully understandable, light and clear language.

For me, a great gift to all of us who, like me, are lovers of this cuisine and want to learn recipes ideal for everyday life, not complicated at all and full of joy, aroma and flavor. Thanks to this book I'm getting delicious recipes, very rich in flavor, and without complications! I recommend it 100%, which is why I wanted to dedicate these lines to it.
