Surely at home you will really want this recipe for steamed chocolate pudding. It is a recipe from Virginia, author of Sweet&Sour , made in the WMF Vitalis, so that we can take full advantage of this pot designed to cook all kinds of steamed recipes.

Isn't it true that in summer we find it difficult to turn on the oven? But we don't like to give up sweet treats, especially chocolate.

Today I bring you a delicious, simple and very quick recipe, presented in an individual version in the beautiful mini cocottes of "Le creuset" , with which you will not need to turn on the oven , because we are going to steam them thanks to the WMF Vitalis pot , which also to serve to eat lightly, it is used to make desserts as quick and rich as these mini puddings.

Steamed Pudding Recipe

Vitalis steamer pot by WMF , Le Creuset ceramic mini-cocottes and Sweet Allysum tea towel by Laura Ashley

This steam pot has the advantage that, since it has a glass lid, you don't need to open it to see the state of your puddings. And it also has a thermometer that will tell you the temperature at which they are cooking at all times.

This chocolate pudding recipe is a simple recipe that does not contain flour and is therefore quite creamy. In addition, since it does not incorporate flour , it is suitable for celiacs, and also for lactose intolerant , since you can replace the traditional cow's milk with hazelnut or almond milk that will give it a very special touch.

Let's go with the recipe!

Ingredients (for 3 puddings)

  • 3 "L" eggs
  • 120 ml of milk (you can substitute almond or hazelnut milk or lactose-free milk)
  • 60g of brown sugar
  • 120gr of chocolate to melt
  • 1 teaspoon Madagascar vanilla extract
  • ¼ teaspoon salt

Preparation

  1. We varnish the interior of the mini Le Creuset cocottes with a pinch of melted butter with the help of a kitchen brush (or spray with release spray if we prefer). We booked.
  2. Prepare the WMF Vitalis pot with 1 liter of water, insert the steam accessory and cover with the lid with the thermometer. We take to the fire until it reaches the temperature of 90-100ºC.
  3. While it is heating up, we prepare the pudding dough, which will not take more than 5 minutes (the time it takes for the water in our WMF Vitalis to heat up). For it:
  4. We melt the chocolate in a bain-marie in the microwave at short intervals so that it does not burn. we booked
  5. Beat the eggs together with the sugar until foamy with the KitchenAid balloon accessory or with the hand mixer .
  6. Add the milk, vanilla extract and salt and mix well.
  7. Finally, add the melted chocolate and mix with a rubber spatula , until we have a completely homogenized mixture.
  8. Divide the dough between the 3 mini cocottes. We place the mini cocottes without their lid on the steam tray of our Vitalis. Cover the Vitalis with the glass lid and let the puddings steam for 20 minutes at a temperature of 90-100ºC. The puddings will swell slightly during cooking but will shrink when cooled, this is normal.
  9. After this time, we lift the lid, prick the inside of one of the puddings and if the needle comes out clean, it's done.
  10. Remove from the Vitalis and let cool to room temperature. Once cold, cover with the lids of the Le Creuset mini cocottes.
  11. When serving, sprinkle a little icing sugar and decorate with some red berries and fresh mint leaves, or simply with a scoop of ice cream.

Chocolate pudding

A quick, simple dessert that will serve you in summer so you don't give up chocolate because you have to turn on the oven.

These puddings keep well for 2-3 days in the fridge. When serving, you can microwave them for a few seconds to warm them up and that's it.

To enjoy.

Gracias.
