If there is an old-fashioned recipe that is quick and easy to make and that I loved when I was little (and when I was older), it is undoubtedly this one that I bring you today: chicken with lemon and rosemary papillote and stuffed with pâté. Accompanied in addition to those tender potatoes that you get in the papillote, it is delicious.

In 5 minutes you leave it ready and in 25 or 30 minutes (depending on the thickness of the meat) the papillote leaves it to the perfect point to enjoy. I leave you the recipe, and you will tell me if you accompany it with potatoes, zucchini, baby beans... Anything goes and with the papillote all the flavor is preserved.

I think it is a good recipe to remind you of two things :

1. In papillote you can cook both fish and vegetables and white meats.
2. Cooking in papillote is the most helpful, because in a few minutes you prepare it and let the papillote cook for you.

Lemon chicken papillote

Ingredients

  • One chicken breast per diner
  • 1 lemon
  • Paté to taste (I like to use the rosemary one, which combines with the lemon flavor and is aromatic, but use the one you prefer)
  • Salt, pepper and oil
  • a few sprigs of rosemary
  • Potatoes, zucchini or whatever you want to accompany the meat

Preparation

  1. Preheat the oven to 190ºC.
  2. Apply a jet of oil to the base of the ceramic papillote .
  3. Salt pepper the chicken breasts, cut them in half to open it like a book and apply a layer of pate in the middle. Close the breasts and arrange them in the papillote.
  4. Put a lemon wedge or two on top of each breast.
  5. Peel and cut the potatoes (with a mandolin , to make them very thin and to cook at the same time as the meat), or the zucchini (not as thin as the potato, it cooks very quickly so thicker is better). Arrange them in one layer on the papillote.
  6. Sprinkle salt and pepper on the potatoes.
  7. Pour a jet of oil on the potatoes and breasts, spread a little rosemary all over the foil, close and take to the oven.
  8. After 25 minutes see if it's done; If you notice that it is missing, leave a few more minutes.

I invite you to do it, and to take advantage of the papillote, with white meats, vegetables and without a doubt with fish. Nothing is healthier and more pleasant than cooking in ceramic (it is not advisable to make a papillote in aluminum foil as is often the case), and it is a piece in which you can cook both in papillote and use the base of the tray papillote to roast without the lid (but you can use it to keep the heat when bringing the tray to the table).

Hola Lourdes, puedes seguir la receta en una cacerola pero a sabiendas de que entonces no estarás siguiendo una receta al papillote y estarás haciendo pollo más bien asado. Pero sí, la misma receta la puedes hacer en cocotte y no tengo duda de que estará deliciosa, pero recuerda que el hierro coge mucha temperatura y asará el pollo rápidamente. Ojo con los tiempos y sobretodo usa pollo de corral para que no suelte mucha agua. Saludos!

Hola Irene, poder se puede hacer. Nosotros no los tenemos en la tienda porque desde nuestro punto de vista los alimentos cogen olores y no es el material más saludable, por eso solo encontrarás el cerámico, pero seguro que podrás hacerlo allí. No se decirte el tema de tiempos si será igual, pero es cuestión de probarlo o ir comprobando el estado de cocción. Saludos!
