Ingredients
- 1 Camembert cheese (you can use brie or another creamy cheese, such as coulommiers)
- 3 or 4 apricots
- 2 tbsp honey
- 2 tbsp extra virgin olive oil
- 1 tbsp sunflower seeds
- 1 or 2 sprigs fresh rosemary
- Salt and pepper
- Slices of toasted bread or crackers to serve
Preparation
- Preheat the oven to 180 °C.
- Place the camembert in the Cheese Baker and make a few cross-shaped cuts in the top rind. Once the cuts are made, use the tip of a knife to slightly lift the rind squares.
- Wash, dry and chop the apricots; arrange them around the cheese and place some on top.
- Sprinkle the sunflower seeds.
- Next, pour the honey over the top and drizzle with olive oil.
- Place the rosemary sprigs over the apricots. Also place one on top of the cheese to decorate.
- Finally, add the salt and pepper and close the 'Cheese Baker'.
- Bake for about 15-20 minutes.
- Serve with toasted bread, toasted seed bread, or crackers.

NOTES:
- As indicated, you can prepare this recipe with any cheese that has similar characteristics to camembert.
- Similarly, you can replace the apricots with peaches or nectarines.
- Choose the honey you like best, but try not to use one with a very strong flavor. A mild honey such as multifloral, rosemary or lemon honey gives just the right touch of flavor and aroma without taking excessive prominence in the final result.
