Easy and super quick to make, pineapple roasted with cinnamon becomes a Sunday dessert thanks to its exotic flavor and color, but I assure you it's a recipe to consider any day of the week, as a dessert or for breakfast in the morning.
You can cook the pineapple on the grill or on the barbecue, and I assure you it will be a hit. That said, Always serve it with a bit of yogurt or ice cream! It's the perfect touch to round off the delivery.
Ingredients
- Fresh pineapple
- Sugar (white, brown, or both)
- Cinnamon
To accompany (optional, choose):
- Sweetened natural yogurt or coconut yogurt
- Cream, vanilla, or coconut ice cream
Preparation
- Cut the pineapple into 1 cm slices, and decide whether to cut these in half (making half-moons), or if you prefer to serve them as whole slices.
- Sprinkle sugar over each slice with your fingers but somewhat generously (you can use white sugar, brown sugar, a mix of both, or even panela if you want to add more nuances to the pineapple).
- Now sprinkle cinnamon, in the same way as with the sugar, all over the slice and generously.
- Heat a iron grill. When it's hot, place the pineapple pieces on it, on the side that has the sugar and cinnamon.
- While that side is cooking, take the opportunity to sprinkle sugar and cinnamon on the second side.
- Wait for the first side to be golden, and when it is, flip the pieces and roast the pineapple on the other side. Remove to a tray or directly onto plates when done.
- Serve while still slightly warm or at room temperature, with yogurt or ice cream. You can serve the pineapple on a plate and the yogurt in a separate bowl, pour the yogurt over the pineapple, or cut the pineapple into small pieces (cubes) and serve the roasted pineapple in a yogurt bowl.

Notes
- It's important that it's cast iron, to reach a high temperature and really get the pineapple roasted.
- Place the pineapple on the grill as is, without applying oil or butter (although it can also be done with a bit of butter if you prefer, even though it's not necessary... but don't use oil).
- It's also an ideal recipe to make on the barbecue. Whether you enjoy it on the terrace in winter or you want a light recipe during summer, you'll see how delicious roasted pineapple on the barbecue turns out!
- The sugar will help caramelize and brown the pineapple more easily, but you can skip it if you prefer to reduce it in your diet.
- You'll know the pineapple is done when it turns brown or golden. If the grill is hot, it cooks quickly, so don't step away from it for long.
