What do you say to making the classic Angel Food Cake recipe but in mini form? Yes, today's recipe is very simple but impressive, and it's truly delicious. These are Mini Angel Food Cakes, made with the Nordic Ware mini Angel Food pan, which are ideal for breakfast, as a sweet dessert or even to accompany afternoon coffee.
The base of the Mini Angels is very simple, and it will remind you of traditional sponge cake batter, but the most special thing about these Mini Angels is the flavor and their elegant presentation.
It's the ideal dessert when you want something sweet but not too cloying, since the lemony touch makes it very refreshing. What do you say, shall we get our hands in the dough?
Nordic Ware mini Angel Food pan
Ingredients
- 5 egg whites
- 100 g of powdered sugar
- 100 g of flour
- 115 g of sugar
- 1 tsp cream of tartar
- 1 tsp of vanilla extract
Preparation
- Separate the whites from the yolks using the Tellier egg separator and let the whites rest at room temperature for about 30 minutes.
- Preheat the oven to 175ºC. It is important not to grease the pan, and that the utensils you will use are completely clean and ungreased.
- Sift the flour and the powdered sugar and set them aside. In a bowl, beat with a handheld mixer the egg whites at medium speed until they are very foamy. You can also use a KitchenAid stand mixer.
- Slowly add the sugar, cream of tartar and vanilla. Increase the speed slightly and beat until soft peaks can form.
- Fold the flour and sugar into the mixture and then pour the batter into the mini Angel Food pan and tap the pan lightly on a surface to remove any air bubbles from the batter. You can also use a wooden stick to stir the batter a little.
- Bake for about 22 minutes. To check if the mini Angels are done, insert a skewer and see if no batter comes out.
- To unmold the mini angels more easily, you can run a long wooden skewer or a spatula around the edges of the cakes to loosen them from the pan.
- Finally, turn the mini Angels out onto a cooling rack and wait for them to cool.

This is a recipe you can then decorate with whatever ingredients you like, but we recommend a simple very light glaze on top and a bit of lemon or orange zest or another fruit, since that way the delicious cake flavor will prevail.

Buenas me compré el molde Macu de al gel food de Nordic, me podríais pasar las cantidades exactas para ese molde, me imagino que luego los pasos son los mismos, tiempo y temperatura del horno. Esta tarta la conocí en EE.UU y solo he encontrado los preparados pero quería hacerla desde cero. Muchas gracias
