This pumpkin spice cake is exceptional! It has such a vibrant flavor, thanks to all the spices that are added. Today we are shaping it like a pumpkin, using the Pumpkin pan by Nordic Ware (don't you find it super cute and original?), but you can shape it into a bundt cake or another loaf cake, there are so many pretty shapes!

Ingredients

  • 340 g of flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 170 g of sugar
  • 170 g brown sugar
  • 1 tsp vanilla essence
  • 225 g cooked pumpkin
  • 110 g butter, melted and slightly cooled
  • 2 eggs
  • 60 ml of milk
  • A little cinnamon sugar to sprinkle

Preparation

  1. Preheat the oven to 175 ºC
  2. Prepare the pan with baking spray and dust with flour.
  3. In a bowl, mix the flour, baking powder, soda, spices and salt. Set aside.
  4. In a slightly larger bowl, mix the sugar, vanilla, pumpkin, eggs and butter until smooth.
  5. Add the flour and milk mixture to the other bowl with the rest of the ingredients. It is important to sift the flour and add it little by little, this will prevent lumps from forming.
  6. Once you have obtained a fine dough, pour the mixture into the previously prepared mould .
  7. Tap the mold gently on the counter to remove any bubbles that may have remained in the mixture.
  8. Bake until set for 40-50 minutes. To check if the cake is ready, insert a clean toothpick into the center and remove it to see if it is still clean or if there is still some of the uncooked batter stuck to it.
  9. Once you have removed the cake from the oven, let it cool on a rack, still in the pan. After 10 minutes, it is time to remove the cake from the pan and let it cool again on the rack.

  • You can decorate this cake with whatever you like. You can sprinkle a little cinnamon or powdered sugar on top, or if you like savoury cakes, you can try putting a little jam inside.
  • To know exactly if your cake is ready to be taken out of the oven, you can use the Nordic Ware cake thermometer . Another very effective trick is to check if there is 1 or 2 mm of space between the mould and the cake, this means that the cake is ready.
