This pumpkin spice cake is exceptional! It has a most vibrant flavor, thanks to all the spices it incorporates. Today we give it the shape of a pumpkin, with the Nordic Ware Pumpkin mold (don't you find it super cute and original?), but you can shape it into a bundt cake or another loaf cake, there are so many pretty shapes!

Don't think twice, get down to business!

Ingredients

  • 340g of flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 170g of sugar
  • 170g brown sugar
  • 1 tsp vanilla essence
  • 225 g of cooked pumpkin
  • 110g butter, melted and slightly cooled
  • 2 eggs
  • 60ml milk
  • A little cinnamon sugar for sprinkling

Preparation

  1. Preheat the oven to 175ºC
  2. Prime the pan with baking spray and dust with flour.
  3. In a bowl, mix the flour, baking powder, soda, spices and salt. Booking.
  4. In a slightly larger bowl, mix the sugar, vanilla, pumpkin, eggs, and butter until smooth.
  5. Add the flour and milk mixture to the other bowl with the rest of the ingredients. It is important that you sift the flour and add it little by little, this way you will avoid lumps from forming.
  6. Once you have achieved a very fine mallet, pour the dough into the previously prepared mold .
  7. Give it a gentle blow in the mold on top of the counter, to eliminate any bubbles that may have remained in the dough.
  8. Bake until done for 40-50 minutes. To check if the cake is ready, you have to insert a clean toothpick in the center and when you take it out, see if it is still clean or if a little of the dough has not yet been made stuck.
  9. When removing the cake from the oven, let it cool on a wire rack with the mold still on. Having passed these 10 minutes, it is time to unmold the cake and let it cool again on the rack.

  • You can decorate this cake with whatever you want. You can sprinkle a little cinnamon or powdered sugar on top, or if you like tastier biscuits, you can try putting a little jam inside.
  • To know perfectly if your cake is ready to be taken out of the oven, you can help yourself with the Nordic Ware sponge cake thermometer . An also very effective trick is to see if there is a 1 or 2 mm gap between the mold and the cake, this means that the cake is ready.
