The author of Sabores y Momentos , Patri, brings us today a recipe that will catch the attention of many: some cookies made in a frying pan! Since there is no need to say much more to encourage you to read it, I leave you with her recipe. Enjoy!
What lovely sunny days we have had these last few weeks, 100% spring, full of flowers and with rays of sunshine that are already warming us up. My children already ask me to have a snack in the garden almost every afternoon and they even fancy going out for a snack during the weekend, while we take long walks in the countryside. Just this past week, thinking about the different alternatives that I can prepare for their snacks, I saw that apart from their favourite sandwiches and biscuits, cookies are what they like the most. And why not prepare them at home to make them healthier? This way I could play with the different flavours and make their snacks something different every day.
Today I bring you one of the ones they like the most, the oat and chocolate ones, with a crunchy texture and intense flavour with that extra touch of chocolate that makes them irresistible! At home they are a success and they love them both for their snacks and for their breakfasts at school. And knowing how much they like them, this weekend I wanted to surprise them and it occurred to me that having the fantastic Le Creuset skillet pans on hand, I could use them as allies to bake some maxi-cookies in them!
I should have taken photos of their faces when, after a long walk in the mountains, they asked me for a snack and I took out the XXL cookies, hahaha!!! They were amazed that they were so big… "but mommy, how did you make them???..." Well, the truth is, it was easy to prepare and very fun to see the result. In no time I had a batch of maxi-cookies to take on an excursion along with their favorite juices. Do you dare to try them?
Le Creuset skillets are made of cast iron, which allows the heat to be distributed evenly across the surface, making them perfect for both cooking and baking. In this case, I used them as a mould to make larger cookies that turned out perfectly!
Ingredients
90g of oat flakes
180g flour
1 teaspoon of yeast
1 teaspoon of baking soda
Pinch of salt
100g brown cane sugar
100g white sugar
80g of chocolate chips or drops (you can use the ones you like best, white, dark or milk chocolate)
1 egg
100g melted butter
1 teaspoon vanilla extract (you can replace it with a pinch of cinnamon powder)
Elaboration
Preheat the oven to 175ºC. In a bowl, mix all the dry ingredients: flour, oats, baking powder, baking soda, salt and both types of sugar. Add the chocolate chips.
On the other hand, beat the egg and add the vanilla extract and the melted butter, which is already warm. Mix and pour the wet ingredients into the bowl of dry ingredients and, using a wooden spoon or spatula, continue mixing until you see that it is easier to form a well-mixed ball of dough with your hands.
From there and depending on the diameter of our skillet , we will form balls of dough. For the 16cm skillet , a ball of dough of approximately 135-140g and for the 20cm one I made a ball of approximately 170g. With this amount of dough, you will get between 4 and 6 maxi-cookies, although if you form balls for normal-sized cookies (3.5cm), you will get approximately 23-25 cookies. We do not need to grease the pan as the grease already in the dough is enough, but if we want we can put a piece of baking paper on the bottom.
Bake for 12-14 minutes for the small ones and 18 minutes for the large ones or until the edges of the cookies are golden. Then remove the skillets from the oven, place them on a rack and let them cool for a few minutes. Then, using a spatula and being careful not to damage them, remove them from the pan and let them cool completely on the rack.
