Ingredients

  • 500 g all-purpose wheat flour
  • 100 g of "Arbequina" extra virgin olive oil
  • 3 medium eggs
  • 1 packet of baking powder (Royal-type yeast)
  • 50 ml of lemon juice
  • Zest of 1 lemon
  • 50 ml of whole milk
  • A pinch of salt
  • 90 g of sugar
  • Mild oil for frying (olive or sunflower)
  • Sugar for coating

Preparation

  1. Put the eggs and sugar in a bowl and beat until you see that the sugar has dissolved.
  2. Add the oil, the milk, the lemon juice, the pinch of salt, and the lemon zest. Mix well until fully combined.
  3. Add the sifted flour in several batches, together with the baking powder, mixing each time until fully incorporated.
  4. Cover the dough and let it rest for half an hour.
  5. After that time, coat your hands and the work surface with oil. Take portions of dough and shape them into balls. It's important that the balls aren't too large (about the size of a walnut) and that all the little balls are as evenly sized as possible.
  6. As you shape the balls, place them on the oiled surface. Repeat the process until you have used up all the dough.
  7. Put a good amount of oil in your Signature Bra stainless steel deep frying pan and let it heat over medium heat.
  8. When you see that the oil is hot, it's time to start frying the doughnuts. It doesn't need to be very hot, since the doughnuts should brown gradually while they cook through on the inside.
  9. To shape the doughnuts, take one ball of dough and place it on top of another ball. Using 2 fingers, make a hole in the center and stretch it so it is nice and large. It needs to be large, because the doughnuts expand when fried, and if it is small, it will close up.
  10. Fry the doughnuts as you shape them. When you see they are golden on one side, turn them over. Remove them from the heat when they are browned to your liking and let them drain on paper towels.
  11. Before they cool, coat them in sugar. Repeat the process until you have fried all the doughnuts.
