When summer comes, salads are the stars of our table. They are refreshing, light, healthy and you can make them as tasty as you like. What happens to me, though, is that I get very tired of always repeating the same ingredients or seasonings, and I have seen the most classic salads a lot. That is why I am always looking for different things.

I'm a big fan of courgettes and since I got my Gefu Spirelli spiraliser, I make spaghetti with tomato sauce almost every week. It's really easy, you just have to fry some onion and a good amount of oil, and then add the hot tomato sauce. The kids eat it like a charm, and the adults, what can I tell you, it's a classic that's renewed and very healthy - we also leave the plate clean! But in summer, I really like making spirals in salads, it's really easy to prepare, you can change the ingredients and everyone always likes it.

As you can see, it doesn't take much to prepare a zucchini salad, and in no time we have a very attractive salad for our table that your family will surely like. A different way of eating vegetables.

Ingredients

For the spiced chickpeas:
  • 250gr of soaked or canned chickpeas
  • 1 teaspoon curry
  • 1 teaspoon paprika
  • 1 teaspoon masala
  • 1/2 teaspoon cumin
  • Salt and oil
For the salad:
  • 2 whole zucchini, washed
  • 2 or 3 washed radishes
  • 1/2 cucumber
  • The juice of 1/2 lemon
  • Oil, salt and pepper to taste
  • Fresh thyme to sprinkle
  • 250gr of Italian burrata

Preparation

We prepare the spiced chickpeas:
  1. If you use canned chickpeas, wash them well and drain them. Dry them well with kitchen paper. Meanwhile, preheat the oven to 180 ºC.
  2. We put baking paper on the oven tray.
  3. Put the chickpeas in a bowl and add all the other ingredients, and stir with a spoon so that everything is well integrated. Spread them out on the oven tray. Bake at 180ºC for about 20 minutes, until they are golden brown.
  4. We take out the tray and let it cool. We set it aside.
We prepare the salad:
  1. We clean, dry and cut the ends off the courgettes (no need to peel them!). We then put them through a spiral cutter like the Spirelli.
  2. We cut the radishes into thin slices and the piece of cucumber into cubes.
  3. Place all the vegetables on a tray or salad bowl , add the juice of half a lemon, the oil, salt and pepper to taste. Stir well.
  4. Finally, sprinkle with fresh thyme, place the burrata on one side and add the spiced chickpeas. Ready to serve and eat. A different way to eat a salad.
I hope you like it and get to work.

Recommendations

  • Use courgettes that are thin - not too thick - it will be easier to cut them into a spiral.
  • The burrata must be of great quality.
  • As for the chickpeas we are going to use, they can be canned if you are short on time, but make sure they are small, they are much better and finer.
  • In addition to using them for salads, they can be used as a healthy snack.
