I'm bringing something very special, The 3 original Nordic Ware pancake recipes from the 1950s! Yes, today's a full-on tribute to one of our favorite brands: Nordic Ware. And since tributes are always lovely celebrations, I bring you three pancake recipes that will delight everyone at home.

I have a lot to tell you, and I hope you enjoy every word as much as every bite of these delicious pancakes.

    The first pancake pans and the original recipes: a bit of history

    Can you believe that one of the first products Nordic Ware made were pancake pans? Yes, around 1950, Nordic Ware introduced the original pancake pan they called "Platte Panne". They were inspired by the original Swedish pans to make a simple, smooth design, a cast aluminum pan with seven cavities... The pan that to this day is still part of their collection!

    As a result, Dotty Dalquist, the founder of Nordic Ware, developed in the 1950s in her home kitchen a series of recipes with the brand's original pancake pan, the "Platte Panne". Recipes to make delicious pancakes that melted in your mouth. Quickly, Nordic Ware popularized pancakes and their pancake pans in the US, making them a breakfast classic in many American homes and, today, around the world.

    About today's pancake recipes

    The three original pancake recipes we share below can be found in Nordic Ware's recipe book, "Old World" and are the following:

    Dotty Dalquist's recipes, more than 70 years later, still turn out wonderfully in all Nordic Ware pancake pans.

    The pans still retain their original seven-cavity design, where only the reliefs vary to make themed or fun pancakes (you can see all Nordic Ware pancake pans here, with which you can enjoy these recipes regardless of the design or relief you choose).

      How to use the pancake pan

      Before starting with the recipes, so you can see how easy it is to make perfect pancakes, here's a short tutorial with the steps to use your Nordic Ware pancake pan:

      1. Place the pan on the heat, on low/medium power, and let it warm for a few minutes so the heat distributes across the surface.
      2. Grease the cavities with butter or baking spray, using a brush to cover each cavity.
      3. With a spoon or ladle, pour the pancake batter you prepared into each cavity.
      4. Keep on the heat until bubbles stop forming. This, together with golden edges, indicates it's time to flip the pancakes.
      5. Flip with the help of a spatula and when they're cooked on the other side as well, remove them to a plate.
      6. Repeat the previous steps until you've used all the prepared batter.

      The 3 original Nordic Ware pancake recipes

      1. Pancakes Platter (the delicious Scandinavian pancakes)

      Ingredients (for 25-30 pancakes)

      • ¼ cup heavy cream (light cream with a maximum of 18% fat)
      • ½ cup milk
      • 1 egg
      • ¼ teaspoon salt
      • ½ cup flour, sifted
      • 1 teaspoon baking powder ("Royal" type baking powder or baking soda)
      • 1 tablespoon sugar
      • 2 tablespoons melted butter

      Preparation

      1. In a medium bowl lightly beat the eggs and then add the milk and cream and mix until well combined.
      2. Next add the sifted mixture of flour, baking powder, sugar, and salt. Finally, add the melted butter.
      3. Preheat your Nordic Ware Pancakes Original Silver Dollar pan (or any other pancake pan) over medium heat and grease the cavities with butter.
      4. Pour the batter into the cavities and cook over low heat until golden.
      5. Serve with jam, honey, or syrup.

      2. Old-Fashioned Pancakes

      Ingredients

      • 3 eggs, whites separated from yolks
      • ½ cup flour
      • 1 ½ cups whole milk
      • 1/8 teaspoon salt
      • 2 tablespoons sugar
      • 3 tablespoons melted butter

      Preparation

      1. In a bowl, beat the egg yolks with the sugar, salt, and melted butter.
      2. Add the flour and milk and stir gently until everything is incorporated. Reserve the batter until you're ready to make the pancakes.
      3. When you're ready to make the pancakes, add the previously beaten egg whites to the batter.
      4. Preheat the pancake pan over medium heat and add a little butter to each cavity of the pan.
      5. Pour the batter into each cavity and cook each side until golden.
      6. Serve with a good berry jam or your favorite fruit jam.

      Note

      • It's advisable to prepare the first part of the batter a few hours before making the pancakes and let it rest in a slightly cool place before adding the beaten egg whites.

      3. Blueberry Pancakes

      Ingredients

      • 2 ¼ cups sifted flour
      • ½ teaspoon salt
      • 2 cups milk
      • 5 eggs, whites separated from yolks
      • 115-125 g blueberries, cleaned and drained
      • 2 tablespoons sugar

      Preparation

      1. In a bowl, sift the flour and all the dry ingredients together.
      2. Add the egg yolks and mix with the milk until everything is well incorporated.
      3. Add the blueberries.
      4. Beat the egg whites to stiff peaks and fold them into the batter little by little, with gentle movements.
      5. Preheat the pancake pan and grease the cavities with butter.
      6. Pour the batter into the cavities and flip until they are ready.
      7. Serve them to accompany coffee, tea, or a good hot chocolate.
