One of my favorite pasta recipes is salmon pasta, with a creamy and smooth cream sauce . I like a pinch of salt, so that it's not too smooth, and I like the salmon to be tender and melt in your mouth with every bite. That's how I like it, and that's how I bring it to you today, in this recipe that I eat less often than I would like, but on those days when I want to enjoy a dish without great pretensions , but that has a nice presentation on the table and I find it to be a complete dish that I really enjoy .

I make this recipe with tagliatelle , penne or rigatone , but it also accepts other types of pasta, as you can imagine, such as colorful bow ties or curls.

Before starting with the salmon pasta recipe!

The trick to making it delicious, for me, is:

  • The salmon should not be overcooked - it would be a mistake to have it overcooked or dry.
  • The cream is fabulous, but it makes the dish flat. That's why it's interesting to add a pinch of pepper , or mix it with a little vegetable broth to give it a little more intensity of flavour.
  • A good option is to add spinach as well: you can add it when you add the cream. The truth is that it adds flavour, colour and health. It's worth it!

Ingredients:

  • 400 g tagliatelle
  • 300 g fresh salmon, cut into pieces
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 200 ml of cooking cream
  • 100 ml of fish stock
  • 1 tablespoon lemon juice
  • 50 g grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Preparation:

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the tagliatelle according to package directions until al dente. Drain and set aside.

  2. Prepare the salmon: In a large skillet, heat the olive oil over medium heat. Add the salmon pieces and cook for 1-2 minutes on each side, until golden brown on the outside but slightly pink in the center. Remove the salmon from the pan and set aside.

  3. Cook the onion and garlic: In the same pan, add the chopped onion and cook for 3-4 minutes until translucent. Add the chopped garlic and cook for one more minute.

  4. Make the sauce: Pour the fish stock into the pan and bring to a boil, then reduce the heat and simmer for about 2-3 minutes. Add the cooking cream and lemon juice. Simmer, stirring occasionally, until the sauce thickens slightly, about 5 minutes.

  5. Add the salmon and pasta: Return the salmon pieces to the pan and gently toss to coat with the sauce. Add the cooked tagliatelle and toss well to coat the pasta with the creamy sauce.

  6. Add the Parmesan: Sprinkle the grated Parmesan cheese over the pasta and stir until it melts and blends into the sauce.

  7. Serve and garnish: Serve the tagliatelle with salmon on individual plates and garnish with chopped fresh parsley. Add salt and pepper to taste.
