Perhaps before that ice cream recipe we should have informed you that there is a wonderful English dessert called Eton Mess . So today we bring you the recipe to prepare it !

Eton Mess is a simple and delicious dessert that combines fresh strawberries, crunchy meringue and whipped cream . It is served in a "messy" way , which gives it a rustic and appetizing look... And the result of all this is a mix of textures and flavors that is refreshing and light! I guarantee you will eat every last bit of this recipe.

Ingredients

  • 3 egg whites
  • 120 g icing sugar
  • 500 g strawberries
  • 500 ml whipped cream
  • 1 tablespoon icing sugar

Preparation

  1. Separate the yolks from the egg whites, and place the egg whites in the bowl of the KitchenAid food processor .
  2. Using the balloon whisk attachment, begin mixing on high speed. Beat the egg whites until stiff peaks form.
  3. While mixing the egg whites, add 1/3 of the sugar (about 40 g) and wait until stiff peaks form again. Repeat twice with the remaining sugar until it is finished.
  4. Preheat the oven to 120ºC.
  5. Place two large spoonfuls of the meringue on a baking tray lined with baking paper and bake for 1 hour and 20 minutes at 120°C. After this time, turn off the oven and allow it to cool completely in the oven (open the door slightly, but not completely, to form a nice meringue and prevent it from falling).
  6. Now pour the whipped cream into the bowl of the food processor and mix at high speed until it forms (stop as soon as you see a thick cream, otherwise you will make butter).
  7. Now break up the meringue, dividing it into parts. Clean and cut the strawberries in half or quarters.
  8. Let's make the Etona Mess glasses: put a layer of meringue in the dessert glasses , add a spoonful of whipped cream and strawberries. Put another layer of meringue, and follow it again with cream and strawberries. You can add a little icing sugar to decorate.

Grades

  • Macerate the strawberries beforehand! The recipe doesn't say so, but they are much more delicious: leave the strawberries a few hours beforehand, cleaned, cut and mixed with a few spoonfuls of sugar to soften and sweeten them. The liquid they release can be poured into the glasses with your Eton Mess as a finishing touch to the assembly (apart from giving it a great decadent touch, it is super delicious).
  • Add some currants, blackberries, blueberries... They all combine wonderfully with the strawberries and the sweetness of the cream and meringue.
  • Personalize the presentation: serve the Eton Mess in individual glasses as we did or in a large bowl, decorating with some whole strawberries or pieces of meringue on top.
