Stewed sausages are an incredibly handy dish, as sausages tend to be liked by both kids and adults, and they turn out very tasty. Today we make the recipe for smoked sausage stew with beans, a dish you can prepare both in cold months and to celebrate Saint John's Eve.
It is a casserole recipe and that you can cook either on the stove or in the oven. To add intensity, we will add chorizo and sweet smoked paprika.
You will only be missing one thing: serve it with a good bread, because I assure you you'll want to enjoy every last drop of sauce!
Ingredients
- 2 or 3 tbsp oil
- 1 large onion, diced
- 65 g chorizo, cut into cubes
- 2 garlic cloves, crushed
- Salt and black pepper
- 1 tbsp herbes de Provence
- 1 tbsp smoked paprika
- 150 g roasted red peppers in brine
- 2 tsp tomato paste dried
- 1 tsp sriracha (optional, you can also use choricero pepper paste)
- 1 jar of garrofones
- 1 jar of white beans
- 2 cans chopped tomatoes
- ½ tbsp sugar
- 1 cinnamon stick
- 24 thin herb sausages (or, if not available, pepper-flavored or your preferred sausages)
- 15 g chopped parsley
Preparation
- Preheat the oven to 200 C.
- Heat the oil over low-medium heat in the Le Creuset iron casserole (I used an oval one, you can use the round one or a low Shallow Casserole-style one for this recipe). Add the onion and fry for 3-4 minutes, until the onion starts to soften.
- Add the chorizo and garlic, add a pinch of salt and fry for four more minutes, until the chorizo releases its juices and the casing is a bit crispy. Add the herbs and paprika and fry for one more minute.
- Chop the red peppers, the tomato paste dried or choricero pepper sauce and the tablespoon of sriracha, until it becomes a thick tomato sauce. Add it to the Shallow Casserole and fry for one more minute.
- Add both types of beans, the chopped tomatoes and then fill one of the empty bean jars with water and add that as well. Add the sugar to reduce the acidity and stir, then add the cinnamon stick and let simmer.
- Meanwhile, brown the sausages in a skillet or on the grill. Add them to the mixture, stir well, and cover it. Put it in the oven for 45 minutes.
- Remove from the oven and stir again. If the sauce needs to thicken a little more, put the Shallow Casserole back in the oven without the lid for 15 more minutes, or set it over the heat to reduce over medium heat.
Notes
- Serve the casserole directly at the table; it will retain heat well. Sprinkle some parsley on top before you do.
- Serve with a very crusty bread — you'll see how rich and intense the sauce is.
- This dish works wonderfully if prepared ahead of time, as the flavors settle. Just reheat it in the oven with the lid on or over medium heat. Stir a little to prevent sticking.
- You can use or combine different types of beans with this recipe. It works just as well with kidney beans, black-eyed peas, or you can also use chickpeas.
